  • 6 eggs (medium)
  • 2 1/2 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1 lemon (juice and grated zest in total about 35 g)
  • 1 cup powdered sugar
  • 4 tbsp lemon juice (and also the grated zest…)
  • 1/2 cup vegetable oil
  • 1/2 cup water

FOR THE PREPARATION OF THE SUPER SOFT LEMON CAKE WITHOUT BUTTER RECIPE

  • First, separate egg whites and yolks into 2 different bowls.

  • Take the bowl with the egg whites and start whisking with the electric whisk, and as the mixture whitens, add half the amount of sugar.

  • Keep beating until you have a glossy soft meringue with high and delicate peaks.

  • Set aside and move on to make the rest of the super soft lemon cake batter.

  • In the bowl with the yolks, add the remaining sugar and whip the mixture until it becomes fluffy and lighter.

  • Slowly pour in the vegetable oil, water, and lemon juice with grated zest.

    Mix everything well and sift the dry ingredients, meaning all-purpose flour and baking powder.

  • Add the dry ingredients to this mix, incorporating them with the electric whisk at low speed.

  • To the freshly made batter, add the meringue by spoonfuls, trying not to deflate the obtained softness.

  • Line the base and perimeter of the pan with parchment paper, lightly greasing all the placed parchment paper.

    Pour this soft batter into our pan, which we will immediately place in a preheated oven at 340°F for about 40 minutes, but as always, rely on the specific characteristics of your appliance and the famous toothpick test.

  • Once the butter-free lemon flavored cake is baked, let it cool, then prepare the glaze by simply mixing the ingredients vigorously.

  • Pour the glaze into the piping bag with a small tip (or just making a small hole in the piping bag) to draw zigzag patterns as decoration…
