Sweet and Sour Creamy Pork

Every now and then we dine with Chinese food (I live very close to the Nagoya restaurant in Bologna) and today I wanted to experiment in the kitchen with the sweet and sour pork recipe taken from the book “The Great Book of Cooking Styles, Cultures and Recipes from Around the World” editorial realization 24 ORE Cultura Srl Milan € 39.90.

The book is divided into Mediterranean, Nordic, Arabic, Asian, Vegetarian/Organic, Caribbean, and Street Food. It has beautiful, detailed photos and is suitable for everyone, even those less experienced in cooking and gastronomy.

Chinese cuisine represents the union of many different regional cuisines passed down through millennia and it’s very complex!

The Chinese cuisine develops according to philosophical rules because the meal is conceived as a sacred moment of reunion between family, citizens, and compatriots.

A fundamental element is soy sauce, and great importance is given to soups, festive sweets linked to tradition, and rice-based alcohol like sake, a Chinese invention.

This sweet and sour pork with peppers and pineapple I must say turned out divine, the sauce is super creamy and after tasting it, every time I passed through the kitchen, I had to eat a piece,… shameful!

In short, I’ll stop talking and jump into the kitchen to tell you about this exquisite Asian dish with pork, fruit, and vegetables, soy sauce, and more!

If you want to make the sweet and sour pork a complete dish, serve it with a portion of white rice, perhaps basmati!

Ingredients SWEET AND SOUR PORK RECIPE

  • 1.3 lbs pork loin
  • 1/2 pineapple
  • 3 tbsps flour (or potato starch)
  • 2 tbsps white wine vinegar
  • 2 tbsps tomato paste
  • 4 tbsps granulated sugar
  • 4 tbsps soy sauce
  • 1 leek
  • 1 bell pepper
  • to taste flour
  • to taste vegetable oil
  • to taste salt

FOR THE PREPARATION OF THE SWEET AND SOUR PORK RECIPE

  • I wash the bell pepper and remove internal filaments and seeds, then cut it into strips about 1/2 inch thick.

    I remove the first layer of leek with the root and slice it into rings, preferring the white or slightly green part 😊

    I put the pepper pieces with the leek in a bowl and add 2 tablespoons of soy sauce and a little flour.

  • I cut the pork into cubes and brown it in a wok with a little vegetable oil, keeping the heat rather high and lively.

    I let it cook for 2/3 minutes and then place it on a plate.

    In the same pan, I add peppers and leek, sautéing them for a couple of minutes as well.

  • I coat the pork cubes in a couple of tablespoons of flour/starch and add them to the wok with peppers and leek, also adding the pineapple pieces.

    While the pork cooks, I mix tomato paste, vinegar, sugar, and 2 tablespoons of soy sauce in a bowl and then pour them into the pan.

    I continue cooking for another 6/7 minutes, allowing the sauce to thicken and flavor the sweet and sour creamy pork with peppers, leeks, and pineapple chunks!
