Ingredients for SWEET BRISÉE WITH ORANGE AND CHOCOLATE
- 1 roll Puff pastry
- 250 g Cream cheese
- 400 g Ricotta cheese
- 3 tbsp Potato starch
- 6 tbsp Granulated sugar
- 1 Orange (juice and zest)
- 100 g Dark chocolate (for decoration)

FOR THE PREPARATION OF SWEET BRISÉE WITH ORANGE AND CHOCOLATE
Preheat the oven to 356°F.
In a bowl, mix the sieved ricotta with cream cheese, blending everything well.
Add the sieved potato starch and sugar.
Mix well the filling of the sweet brisée with orange and chocolate by adding a couple of tablespoons of orange juice and the grated zest of 1/2 fruit.
Unroll the puff pastry (or follow the recipe and prepare it in our kitchens) and place it on the 20cm mold keeping the parchment paper it already has.
Pour the orange filling over the pastry shell, leveling it well.
Bake for about 25 minutes or according to your appliance’s characteristics.
While the citrus chocolate dessert cools, chop the dark chocolate quite finely, perhaps even flavored with orange, why not?!
Melt it in a bain-marie or microwave, stirring several times to make it fluid and creamy.
Put the melted chocolate in a piping bag and decorate the surface with random swirls or follow a geometric design you like.
Before serving, I also added the grated zest of the remaining half orange.
