Sweet Corollo from the Island of Elba

I am always intrigued by traditional recipes and when HERE I found the recipe for the sweet corollo from the Island of Elba, I immediately thought of trying these ingredients to make this typical cake from a beautiful Italian island.

The typical sweet corollo from the Island of Elba is the classic pantry dessert perfect for breakfast, and its aroma is delightful because a shot of anise liqueur is also added to the dough.

The corollo is the classic cake that was and is baked to celebrate an event and is linked to a romantic story from the village of San Piero.

Here, it was customary to prepare the corollo on the first Sunday of May by all the young girls to whom the “maggiolanti” had dedicated serenades or the May song.
After singing to all the beloved girls, the maggiolanti would retrace their steps, collecting all the corolli dedicated to them. Personally, I did not use a ring mold and apologize if this was the only format to use!! The sweet corollo from the island of Elba  is soft, light, and extremely fragrant: a real treat!

Ingredients SWEET COROLLO Recipe Cake from the Island of Elba

  • 4 cups Flour (00)
  • 5 oz Butter (room temp)
  • 1 1/2 cups Sugar
  • 4 medium eggs
  • 1/4 cup Anise liqueur
  • 3/4 cup Milk
  • 1 lemon (zest)
  • 1 packet baking powder
  • Powdered sugar (optional)
  • butter and flour

Preparation Sweet Corollo Recipe from the Island of Elba

  • Pour the flour into the mixer (or a large bowl). Place the eggs and softened butter cut into pieces in the center. Mix the ingredients by combining everything together.

  • Add the sugar, anise liqueur, and grated lemon zest. Now add the warm milk after dissolving the baking powder in it.

  • Mix everything with the paddle attachment to obtain a smooth, homogeneous, and rather light dough. Pour the mixture into the previously greased and floured mold.

  • Bake at 350°F for about 45 minutes. Once cooked (test with a toothpick), let the sweet corollo from the island of Elba cool slightly.

  • Dust the corollo with powdered sugar and bring to the table this exquisite dessert from Tuscan regional cuisine.

Tips and notes

When I read how the corollo was prepared by making a fountain with the flour and not whipping eggs and sugar as I thought, I was, I apologize, a bit puzzled because I feared it would not be as light and soft as it should be and… Googling around, I found HERE the exact same measurements but with the method I suggested… It would be nice to retry the recipe with the sugar and egg whipping method and soon I will try to see which makes the sweet corollo from the island of Elba even more special!!!
