A very simple preparation where it’s essential not to overcook the sponge cake because it might dry out too much and lose its fragrance and softness.

SWEET CREAM ROLL

Ingredients for SWEET CREAM ROLL RECIPE

  • 1.7 cups Fresh liquid cream
  • 2/3 cup Sugar
  • 1 cup Flour
  • 4 Eggs
  • 1/2 lemon (zest)
  • 1 tbsp lemon juice
  • to taste jam of choice (strawberries)

Preparation of Sweet Cream Roll Recipe

  • Beat the eggs and sugar for a long time: the mixture should write and fall in a ribbon.

    Add the flour with a spatula and with movements from bottom to top to not deflate the mixture.

    Also add the grated zest and juice of the lemon.

  • Mix gently and pour into a baking tray lined with parchment paper of 12 x 16 inches.

  • Bake for about 12/13 minutes at 356 °F to brown the sponge cake.

    Whip the fresh cream and keep it in the refrigerator until needed.

  • Unmold and flip the sponge cake onto a towel sprinkled with granulated sugar.

    Trim the edges and roll it onto itself without tightening too much.

    When it’s cool, unroll it and proceed with the filling.

  • Spread the strawberry jam over the sponge cake.

    Then add the whipped cream. Roll the filled sponge cake without tightening too much.

  • Wrap the soft cream roll with aluminum foil and place it in the refrigerator until it’s time to slice and serve it.

Advice and Notes

This sweet roll I made with the sponge cake but if you prefer it can also be made with Genoise sponge using potato starch instead of regular flour. The filling with cream and strawberry jam is creamy and I’d say …wowowww! But if you prefer, you can use pastry cream, milk cream, ganache, etc. etc…. basically, the filling that suits you and your family best!
