Even the recipe for the sweet crown of cream and fruit is one of those quick ‘smart’ ideas that in summer with the crazy temperatures of recent days can help us make tasty desserts in very little baking time.
All you need is a package of ready-made puff pastry, apricots (or other fruit like peaches, for example), a few tablespoons of custard, and voilà…

Ingredients
- 7 oz custard
- 1 package ready-made puff pastry (round)
- 4 apricots (8 halves, even syruped apricots)
- to taste powdered sugar

Steps
1) First, I unroll the package of puff pastry on a work surface and place a small bowl or an upside-down glass in the center to determine the center, which will then be divided into wedges, becoming the sunflower with cream and apricots.
2) I place the custard at least 0.4 inches below the central circle made with the glass or bowl, and I spread it around the circumference.
3) I arrange the 8 apricot halves on top, which can be used raw or softened in a syrup made of water and sugar (1:1 ratio, the same weight of the 2 ingredients) over low heat for about 5/6 minutes.
4) Now I remove the glass or bowl placed in the center and divide the puff pastry into 8 wedges, then fold them over the outer perimeter, sealing the tips well and enclosing the apricots inside.
5) Bake the sweet sunflower with cream and fruit at 350/375°F for about 20/25 minutes depending on the characteristics of your oven.
6) Once cooked, let it cool and dust with powdered sugar before tasting…

For this quick sweet recipe we can also use lemon cream instead of the more classic custard and also add peaches, plums, or other fruits to taste!
To make the sweet crown of cream and fruit richer, we can add chopped pistachios and/or almonds…
