A tasty and simple savory idea with sweet potato chips with herbs that goes well with simple and grilled meat dishes.
To prepare this side dish, a mandoline or a sharp knife is essential to cut thin slices that may also get a bit charred, but at least for me, the crunchier they are, the more appetizing!
The mandoline or vegetable slicer is the best tool for this type of recipe, but it must be used with great care and always with protection because if you’re not very careful, YOU CAN SLICE OFF FINGERTIPS IN A SECOND, and I tell you this from experience! With this tool, we can slice both vegetables and fruits precisely, whether it’s smooth cuts, wavy, wide or narrow julienne, thin matchsticks, and so on.
I seasoned with fresh rosemary and Maldon salt flakes, but you can also add other herbs like sage.

- 1 sweet potato (or American potato)
- to taste extra virgin olive oil
- to taste paprika
- to taste Maldon salt
- to taste pepper

- Baking Sheets
- Parchment Paper
- 2 Spoons
- Mandoline
FOR THE PREPARATION OF SWEET POTATO CHIPS WITH HERBS
I wash the sweet potato well and slice it with the mandoline.
I arrange all the slices in a bowl, then add the paprika for me sweet, extra virgin olive oil, and a pinch of pepper.
I mix well with 2 spoons to ensure the thin slices are perfectly seasoned.
I line a baking sheet with parchment paper and lay out the sweet potato slices trying to keep them in a single layer.
Now, I just need to bake at 350°F in a preheated oven, cooking for about 15 minutes, then check and turn the slices for a few more minutes of cooking.
Before serving, I add some Maldon salt flakes and fresh rosemary, bringing it immediately to the table!
I confess that I eat a lot of these sweet potato chips!
