Sweet potato rounds with avocado cream are a quick appetizer and spectacular, ready in just 20 minutes. A very simple yet truly amazing recipe, perfect for when you want to serve something tasty, colorful, and light without wasting time.
I often make them because they cook in no time: just slice the sweet potato into rounds, season it, and bake. Meanwhile, blend the avocado, and it’s done. Super soft inside, slightly crunchy outside, and with that green cream that wins you over at the first taste.

Even the fussy one in the house, my son, liked it, and we argued over a few extra rounds to devour!!!! THESE KIDS, HUH???

Ingredients

  • 1 sweet potato (large)
  • 1 avocado (ripe)
  • 1 tablespoon lemon juice
  • to taste salt
  • to taste pepper
  • to taste chili flakes (in flakes for me)

Steps

  • Peel and cut the sweet potato into rounds approximately 0.4 inches thick.
    Then arrange each circle on a baking tray, brush with oil, salt, and pepper.

  • Bake at 392°F for 20 minutes in static mode.

    Once cooked, let them cool.

    For the avocado cream, mash the avocado in a bowl, also adding lemon, salt, and pepper.

    Mix well combining the ingredients into a smooth but not too smooth sauce.

  • Place a spoonful of avocado cream on each round or put it in a piping bag with a star nozzle (for me) and place a tuft on each slice of sweet potato.

    Add a pinch of chili flakes and serve.

    The flavors balance each other out, and the result is a finger food that is decidedly good!
