I spread out the sandwich bread by gently flattening the slices with the rolling pin to make them thinner and flexible, ready to be rolled.
I add the peeled peaches, diced and lightly drizzled with lemon juice.
I roll each filled slice of sandwich bread onto itself to form a roll. I press well but do not squeeze too tightly to avoid crushing the fruit filling and cream cheese with honey.
I wrap each filled roll in plastic wrap and place it in the refrigerator for at least an hour.
After the resting time, I slice the roll into pieces 0.8-1.2 inches thick with a serrated or well-sharpened knife.
All that’s left is to plate them, decorating with amaretti, mint leaves, and extra honey or a dusting of powdered sugar.
I swear… devoured in 2 minutes by my nephews!
