Sweet Swirls with Sandwich Bread, Peaches, and Amaretti

A no-bake summer dessert, ready in minutes with very few ingredients but with a wow effect: these sweet swirls with sandwich bread, peach cream, and amaretti are fresh, soft, fragrant, and easy to make.

These swirls are really a clever idea for a light snack or a quick dessert!

All you need is a rolling pin, a few slices of soft sandwich bread, some ripe peaches, and crumbled amaretti.

Roll them up, put them in the fridge, slice them, and you’ll have sweet rolls that look like summer pastries.

They are perfect to serve cold, also ideal on a buffet tray or as a last-minute dessert for unexpected guests.

No oven, no stress, but plenty of flavor.

Ingredients

  • 4 slices sandwich bread (long white without crust)
  • 2 peaches (nectarines, or white if desired)
  • 4.5 oz cream cheese (or firm ricotta)
  • 6 amaretti
  • 1 tablespoon honey (wildflower or acacia)
  • 2 tablespoons lemon juice
  • to taste powdered sugar

Let’s Make This Quick Summertime Dessert Together

  • I flatten the sandwich bread slightly with a rolling pin to make the slices thinner and more flexible, ready to be rolled.

  • I then spread the cream cheese mixture with honey and coarsely crumbled amaretti.

  • I add the peeled peaches, diced, and just sprinkled with lemon juice.

  • I roll each slice of filled sandwich bread onto itself to create a roll. I compact well but don’t tighten too much to avoid squeezing the fruit filling and honey cream cheese.

  • I wrap each filled roll with plastic wrap and place it in the refrigerator for at least an hour.

  • After the resting time, I slice the roll into pieces 1 inch thick with a serrated or well-sharpened knife.

    I just have to plate, decorating with amaretti, mint leaves, and more honey or a dusting of powdered sugar.

    I swear… devoured in 2 minutes by my nieces and nephews!
