Tagliatelle with sausage and artichokes here is the recipe of the day since I have more time and I’ve made myself want to clean this vegetable that I don’t love too much, but this way paired is really tasty!

Ingredients for TAGLIATELLE with SAUSAGE and ARTICHOKES

  • 14 oz sausage
  • 10.5 oz dried tagliatelle
  • 4 artichokes
  • 1 1/3 cup white wine (dry)
  • 1 tbsp tomato paste
  • to taste extra virgin olive oil
  • to taste parsley (chopped)
  • to taste salt and pepper

FOR THE PREPARATION OF TAGLIATELLE RECIPE with SAUSAGE and ARTICHOKE SAUCE

  • Clean the artichokes by removing the tips, the outer and harder leaves, cutting them into wedges, and removing the internal beard.

    As we clean them, put them in a bowl with acidulated water so they don’t blacken.

  • In a large pan, put the crumbled sausage and let it brown for 7/8 minutes without added fats.

    When the meat is browned pour the wine and let the alcoholic part evaporate well.

  • Drain the artichokes, pat them dry with paper towels, and add them to the pan.

    Mix well, add the tomato paste and cook for about ten minutes or until the artichokes are tender.

  • Boil the pasta normally in salted boiling water, drain it al dente and pour it into the pan with the sausage and artichoke sauce.

  • Add the chopped fresh parsley and toss the pasta, then plate and serve.
