Gnocchi today a delicious first course with zucchini and smoked salmon a very tasty dish that brightened my solitary lunch since the young teenager critical of everything and everyone was downtown with friends shopping!
The smoked salmon (a remnant from the past holidays) I got it on super sale at the hypermarket and instead of making a mousse as a savory appetizer to serve with baked golden crostini, I preferred to make a rather quick first course using potato gnocchi but the sauce also lends itself to other types of short pasta.

- 1.1 lbs potato gnocchi
- 1 cup zucchini (julienne cut)
- 1 shallot
- 3.5 oz smoked salmon
- 3.5 oz light cream (or Philadelphia)
- 1 knob of butter (or 1 teaspoon of extra virgin olive oil)
- to taste salt and pepper

FOR THE PREPARATION OF THE RECIPE TASTY GNOCCHI WITH ZUCCHINI AND SALMON
Finely slice the shallot and place it in a hot pan with the butter or extra virgin olive oil.
As soon as it has wilted, add the zucchini, washed, topped, and grated julienne.
In a pot of boiling salted water cook the potato gnocchi, draining them as they rise to the surface.
The best potatoes for making gnocchi are those of the Primura variety from Bologna, versatile with excellent flavor.
Pour the gnocchi into the pan with the zucchini, also adding the salmon cut into strips and the amount of light cream.
Sauté, adjusting the salt and pepper, and serve this first course of gnocchi immediately!
