The Christmas Panettone

The Christmas panettone is simply a roughly 2 lbs panettone filled with 4 layers of white cream with chocolate chips and decorated with candied cherries and, let me say, with delicious cookies made with spiced shortcrust that make it look very, very cute to present on the table for the upcoming Christmas holidays!!!
Today is Sunday, December 19, and whether we like it or not, Christmas has arrived!
I won’t open personal parentheses on Christmas 2021 because as Tolstoy used to say, “all happy families are alike; every unhappy family is unhappy in its own way” and I wish you, from now on, smiling tables with people who open their arms and hearts to welcome you with all your lightnesses and burdens and never judge you but stay by your side, suffering if necessary together with you!
If you are not into panettone but prefer pandoro here is my soft recipe for you!

THE CHRISTMAS PANETTONE

Ingredients

  • 1 panettone
  • 14 oz mascarpone
  • 1 cup heavy cream
  • 10 candied cherry
  • 1/3 cup powdered sugar
  • 1/3 cup chocolate chips
  • 14 oz mascarpone
  • 1 cup heavy cream
  • to taste candied cherry
  • to taste rosemary
  • 1 3/4 cup flour (+ MORE FOR WORKING DOUGH)
  • 1/3 cup brown sugar
  • 2 egg yolks
  • 1/2 cup butter
  • 1 teaspoon mixed spices (cinnamon, ginger, cloves for me)
  • 1 egg white
  • 1 1/2 cup powdered sugar
  • 1 tablespoon lemon juice

Steps

  • TO PREPARE THE SPICED COOKIES that decorate the Christmas panettone, I sieve the flour with the chosen spices and then add the softened butter in pieces.

    Then I add the sugar and the egg yolks and start kneading to form a dough that I wrap in cling film and let rest for at least 30 minutes.

    After the resting time, I roll out the spiced dough using a rolling pin, a “pinch” of flour, and two sheets of parchment paper to avoid everything sticking sadly…

    The thickness of the Christmas-themed spiced cookies should be about… guys, sorry, but I’m never right… so don’t make them too thin, okay?

    Let’s have fun with cookie cutters for houses, stars, gingerbread men, and reindeer, and… basically, get creative but BE CAREFUL if you have snowflake-shaped cutters like the one near the houses… be very careful because here at my house, even though I waited a day before decorating them, they broke and in the end, I ate them myself!
    I bake the Christmas cookies at 375°F for about 10 minutes, or according to the characteristics of your oven.


    LET THEM COOL COMPLETELY…

    PREPARE THE GLAZE by mixing all the ingredients with a whisk and then, using a piping bag, I decorate them as I like using also sprinkles, nonpareils, smarties…


  • PREPARE THE FILLING FOR THE CHRISTMAS PANETTONE and in a stand mixer or a bowl, I put the mascarpone and sugar and start mixing, then gradually add the cream and blend everything to obtain a soft white sweet cream.
    I also add the chocolate and chopped candied cherries.
    Mix well, and the filling cream for the Christmas panettone is ready.

    SLICE THE PANETTONE INTO 4 LAYERS WHICH WEIGH ABOUT 2 LBS and fill it with the mascarpone and cream.

    REASSEMBLE THE PANETTONE FROM WHICH I REMOVED THE DOME.

    MIX CREAM AND MASCARPONE WELL and cover the entire panettone for Christmas, decorating it with spiced cookies decorated with glaze, rosemary sprigs, and red candied cherries.

    THE CHRISTMAS PANETTONE CAN BE FILLED THE DAY BEFORE, stored in the refrigerator wrapped in cling film, and then covered and decorated at the last moment before serving and enjoying the Christmas dessert.
