Tiropsomo Greek Feta Flatbread

TIROPSOMO GREEK FETA FLATBREAD I won’t repeat how much I love Greek cuisine because after saying it over and over, you might end up hating me, haha! I couldn’t resist making the Greek feta flatbread I saw published in an issue of Sale&Pepe.

The tiropsomo is rather dense* generously sprinkled with sesame seeds and was a delightful surprise because I had never tasted this Greek flatbread with feta and sesame seeds in the Greek restaurants where I have worked and cooked with Nicos and Simonetta in the past.

The recipe published didn’t give precise instructions for the liquids to be added, just specifying “glass” as a unit, so I found the right amount for a satisfactory dough.

Oil and milk have a different specific weight so even if we’re talking about a glass, the gram dosage varies… I’m being verbose lately, so… off to the kitchen to make the tiropsomo!
The Greek feta is a very tasty and versatile goat cheese that we find now in all supermarkets both in compact block and in pre-seasoned and very tasty cubes!

Ingredients for GREEK FETA FLATBREAD

  • 17.6 oz Greek feta
  • 2 cups Flour
  • 0.8 cups Extra virgin olive oil (+ 1 tablespoon for the mold)
  • 0.8 cups Milk
  • 4 Eggs
  • 1 packet baking powder for savory pies (I used Pizzaiolo)
  • to taste sesame seeds

Preparation of TIROPSOMO GREEK FETA FLATBREAD

  • • In a large bowl, mix the sifted flour with the baking powder for savory preparations.

    Also add the extra virgin olive oil and milk at room temperature gradually.

  • Now add the eggs while continuously mixing the batter.

    Now crumble the feta with your fingers and add it to the dough, continuing to work with your hands until you have a mixture that “glides” off your fingers.

  • • Grease a 11-inch mold and pour in the mixture, leveling it well. Generously sprinkle it with sesame seeds and bake in a preheated oven at 392 °F for about 30/35 minutes or depending on your oven’s characteristics.

  • • The tiropsomo should be golden and with a delicious and crunchy crust! Let the Greek feta flatbread cool and serve it sliced or cut into squares.

  • • For me, it was like a bread with which I had dinner, and I had to force myself not to overeat because I liked it so much!

Tips and notes

The feta is perhaps the best-known Greek cheese worldwide, it has a semi-hard texture but crumbles easily, and with its particular flavor, it gives a different and very interesting touch to all dishes.
