TOMINI WITH HONEY with seeds, zucchinis, and mixed cherry tomatoes

A unique dish: the recipe of tomini with honey, seeds, zucchinis, and mixed cherry tomatoes that solves dinner wonderfully!

The recipe was featured in an issue of Cucina Moderna, and we can vary it using seasonal vegetables and replacing the tomino with burrata, Greek feta, or a slice of provola or smoked scamorza!

The tomino is a cheese that can be made from goat’s milk, cow’s milk, or mixed milk and is special because when heated properly, it becomes almost creamy, and once the thin crust is cut, it spreads and envelops vegetables or other ingredients with goodness.

Ingredients RECIPE TOMINI WITH HONEY with seeds, zucchinis, and mixed cherry tomatoes

  • 4 tomini
  • 0.7 oz mixed seeds
  • 1.76 lbs mixed cherry tomatoes
  • 1 cup zucchinis
  • 2 cloves garlic
  • 3 tbsps wildflower honey
  • to taste thyme
  • to taste salt
  • to taste parsley
  • to taste pepper

FOR THE PREPARATION OF THE RECIPE TOMINI WITH HONEY with seeds, zucchinis, and mixed cherry tomatoes

  • with a food brush, brush honey on the tomini on one side only and sprinkle with mixed seeds, thyme, parsley, and pepper.

    Wash and cut the mixed cherry tomatoes into wedges,

  • Trim the ends of the zucchinis, wash them and cut them in half lengthwise into small sticks, possibly of the same dimension.

    Place the freshly cut vegetables in a baking tray, adding the smashed garlic cloves and some of the aromatic herbs, always seasoning with salt and pepper.

  • Pour some tablespoons of extra virgin olive oil and bake in a preheated oven at 392°F for about 20 minutes, stirring the vegetables after a few minutes of cooking.

    When the vegetables are tender and start to color, add the tomini cheese and continue cooking the vegetable side dish for another 5/6 minutes or until the tomini are soft, therefore melted inside!

    Remove the tray from the oven and serve immediately.
