Ingredients for TORTELLINI STUFFED STAR RECIPE
- 14 oz tortellini
- 2 1/2 cups flour
- 3/4 cup butter (plus 3-4 pieces for cooking)
- 1 egg
- 1 cup béchamel sauce
- 4 oz cooked ham (or pancetta or speck in cubes)
- to taste sage

FOR THE PREPARATION OF THE TORTELLINI STUFFED STAR
To prepare the tortellini stuffed star you need to make the pasta shell … but if you’re in a hurry and don’t feel like it, you can use ready-made shortcrust pastry…
Mix the dough in a food processor with the flour and 150g of well-chilled butter in pieces, the egg, salt, and pepper, and about 50 grams of cold water
Run the machine to obtain a ball with the ingredients, which I leave to rest, covered with cling film, for about 30 minutes.
After the time has passed, I roll out the dough with a rolling pin and line a star-shaped mold.
I fill the form for blind baking with parchment paper and dry beans or special ceramic balls and bake at 356°F for about 30/35 minutes.
Let it cool completely and start preparing the filling of the stuffed star with filled pasta the tortellini!
In a non-stick pan with a knob of butter and sage leaves, sauté the diced cooked ham, and at the same time bring a pot of salted water to a boil.
Cook the tortellini, drain them al dente, and put them in a bowl adding the diced cooked ham, béchamel sauce, and grated cheese.
Season the filled pasta well, making it wrap in the creamy dressing and then pour it into the mold, adding a few knobs of butter and more grated Parmesan Reggiano.
All that remains is to bake the tortellini stuffed star in a preheated oven at 374°F for about 20 minutes or depending on the characteristics of your appliance.
Let it cool for a few minutes and serve…
