The lubianska is the recipe for the Triestine version of the cutlet, a tasty and delicious dish from the Triestine cuisine. This cuisine is gastronomically rich with excellent dishes and is influenced by many culinary traditions from various cultures that have crossed it, particularly the Central European one. Trieste is a beautiful city (I visited it as a girl with my parents and I still have a vivid memory of the Castle of San Giusto!!!!) and its cuisine features fish and meat dishes, as well as fine wines.

Ingredients LUBIANSKA RECIPE
- 8 slices Pork loin
- 4 slices fontina cheese
- 4 slices prosciutto
- as needed Flour
- as needed breadcrumbs
- 1 Eggs (OR 2 DEPENDS …)

Preparation
Take 4 slices of pork loin, pound them slightly, salt and pepper them.
Place a slice of cheese on top, followed by a slice of prosciutto.Cover everything with the other 4 slices of pork loin, sealing them very well with each other.
Pass them through flour, beaten egg, and lastly breadcrumbs.
Pour plenty of seed oil (peanut oil has the highest smoke point) and when ready, fry the cutlet known as lubianska and brown it on both sides for the needed time until it is golden and crispy.
Drain them on special absorbent paper and serve them quickly, hot and steaming, with a light salad or better yet, a nice spoonful of creamy and delicious mashed potatoes!!
