A very tasty first course today: trofie with radicchio cream, also with robiola and a few walnut halves to add the crunchy note that is now so important for the balance of the final taste.
If you prefer, you can use cream instead of robiola, letting it thicken a little in the pan before tossing the pasta, together with radicchio.
Short pasta is my pick and gemelli or casarecce work great, as do rigate penne or… whatever you have in the pantry — now, to the kitchen!!!

TROFIE WITH RADICCHIO CREAM

Ingredients RECIPE TROFIE WITH RADICCHIO CREAM
- 5 heads Treviso red radicchio
- 14 oz trofie pasta
- 1/2 cup walnut halves
- 5.3 oz robiola cheese
- 3 oz diced speck (or diced pancetta)
- 1 shallot
- to taste extra virgin olive oil
- 1/2 glass still white wine
- to taste grated Parmesan
- to taste salt and pepper

- Nonstick frying pan
- Casserole / saucepan
FOR THE PREPARATION OF THE RECIPE TROFIE WITH RADICCHIO CREAM
Wash and cut the radicchio into strips, slice the shallot, and brown the diced speck or pancetta of your choice in a nonstick pan.
Add the sliced radicchio to the speck and let it stew for a few minutes.
Pour in the wine and let the alcohol evaporate completely.
Blend the radicchio with a little EVOO (extra virgin olive oil), add the robiola and roughly mix everything, incorporating some of the pasta cooking water.
Cook the trofie in plenty of salted water and drain them al dente.
Place the pasta in a bowl with the radicchio and robiola cream, the walnut halves broken with your fingers, the grated Parmesan, and more cooking water if needed.
Adjust salt and pepper and serve the trofie with radicchio cream immediately! Enjoy this very appetizing seasonal first course!

Tips and notes
There are many varieties of radicchio, from Treviso red radicchio to Castelfranco variegated, Chioggia red and many others. Radicchio contains a good amount of nutrients, has a minimal caloric contribution (10–15 calories per 100 grams of product) and provides decent amounts of minerals such as iron, calcium, magnesium and potassium.
