A very good first course today with trofie with shrimp and orange! The shellfish pair perfectly with the aroma of citrus fruits, and the shrimp tails with zucchini enhance the taste of this very easy and tasty first course.
The super-expert son in food and wine thought of modifying the recipe which certainly has a more delicate and fragrant base note by adding a bit of chili pepper, then agreeing with me that … it was better without the spice!!! TROFIE WITH SHRIMP AND ORANGE

Ingredients RECIPE TROFIE WITH SHRIMP AND ORANGE
- 11 oz dried trofie
- 3 zucchini (I only took the green part)
- 24 shrimp tails
- 1 organic orange (juice and zest)
- to taste Extra virgin olive oil
- to taste salt and pepper

because it is solid, quite heavy, and I believe the cost is adequate to its characteristics! We can sauté pasta and sauce in it, but also prepare scallops, a stew… basically, I use it for everything and it’s perfect for me!
Preparation RECIPE TROFIE WITH SHRIMP AND ORANGE
Clean the shrimp tails by removing the shell and leaving only the final tail.
Carefully remove the intestinal vein.
Wash the SHELLFISH well under running water and set them aside in a bowl.
Wash the zucchini and cut into thin julienne strips: I mostly used the green part, but if you want to use the whole zucchini, reduce the number from 3 to 2.
Grate the orange zest then squeeze its juice and set everything aside.
The trofie are a type of elongated and thin pasta from Ligurian cuisine.
They do not swell much during cooking, so keep this in mind for the quantities to cook for your preparation.
As always, cook the pasta in boiling salted water.
In a pan or wok, heat a couple of tablespoons of extra virgin olive oil and add the thinly sliced zucchini.
Season with salt and pepper and sauté them for just a few minutes: they should remain crunchy!
Add the shrimp tails and let the sauce cook for another minute.
Now pour in the orange juice and taste to adjust the seasoning.
Drain the pasta and add it to the pan, add the grated zest and sauté the trofie with shrimp and orange again.
Assemble the plates and personally, before serving, I added a drizzle of raw extra virgin olive oil!!
