Tuna stuffed baked potatoes are a simple homemade dish for which you can also use baked potatoes or boiled potatoes left over from other recipes.
I previously baked them after thoroughly cleaning, brushing, wrapping in aluminum foil, and cooking for about 40 minutes in a static oven at 356°F.
To bake the potatoes in this way, the timing is indicative because it clearly depends on the size of the tuber, haha!
How to vary the filling of tuna stuffed baked potatoes? Ingredients for Tuna Stuffed Baked Potatoes
- 3 potatoes (medium)
- 4.4 oz tuna in oil (drained)
- 3.5 oz melted cheese (slices)
- 4 tbsp tomato sauce (+ a little more before baking)
- 4 tbsp grana padano (grated)
- to taste extra virgin olive oil
- to taste dried oregano
- to taste salt
- to taste pepper
Preparation
To prepare the tuna stuffed baked potatoes you first need to …cook the potatoes!
I personally cleaned them well, wrapped them in aluminum foil with the skin on, and put them in a static oven at 356°F for about 40 minutes or until they are tender when pierced with a skewer
Once cooked, let them cool or at least warm until you can handle them without burning yourself, haha!
Leave the skin on and cut them in half lengthwise.
Scoop out the inside leaving about 0.4 inches around the circumference of the potato.
Place the collected pieces in a bowl and add the well-drained tuna in oil, 4 tablespoons of tomato sauce, and about 2.1-2.5 oz of diced melted cheese slices.
Season with salt and pepper, mixing without turning it into a mushy mess.
Fill the cavity of the boiled potatoes with the skin on with this tuna mix.
Top with a little tomato sauce, the remaining diced melted cheese, and some tablespoons of grated grana.
Drizzle over the tuna stuffed potatoes a little extra virgin olive oil and some pinches of dried oregano.
Now just bake the tray with the stuffed potatoes at 356°F, letting them infuse and brown for about 20-25 minutes or according to your oven’s features.
Once cooked, serve the tuna stuffed baked potatoes at the table, letting them cool for a few minutes.
This simple recipe is very tasty and the potatoes are delicious even at room temperature…
