RECIPE TUNA TARTARE WITH VEGETABLES

Have you heard of Evelina Flachi? She’s a famous nutrition science specialist, writes for Starbene, participates in La prova del cuoco, and has a column in Cucina Moderna where she prepares light recipes. I got the idea for this preparation from that magazine (modified because I removed the feta cheese) for this tuna tartare with vegetables, a very tasty dish!

From Evelina Flachi I prepared another dish, a first course whose recipe I leave just below; it’s simple to make and very pleasant, but now let’s move on to this fresh and appetizing summer dish!

Tuna Tartare with Vegetables

Ingredients RECIPE TUNA TARTARE WITH VEGETABLES

  • 1.1 lbs fresh tuna fillet
  • 1 yellow bell pepper
  • 4 tomatoes
  • 1 cucumber
  • 3.5 oz Greek olives (preferably Kalamata)
  • 1 carrot
  • 1 lemon
  • 2 celery
  • q.b. Extra virgin olive oil
  • q.b. salt and pepper

Preparation RECIPE TUNA TARTARE WITH VEGETABLES

  • BEFORE CONSUMING Before consuming raw fish IT MUST BE FROZEN FOR AT LEAST 96 HOURS AT LEAST AT – 0°F, this obviously is not debatable, so… .

  • Place the sliced tuna on a tray lined with baking paper, cover with cling film, and put it in the freezer for at least 96 hours.

  • When ready to use, let it thaw in the fridge and then proceed with the recipe for tuna tartare with vegetables.

  • Clean all the vegetables by removing seeds and filaments from the peppers, removing seeds from the tomatoes, cleaning the outer filaments from the celery, peeling the cucumber and carrot.

  • Dice all the vegetables and put everything in a bowl. Also add the pitted olives cut into strips.

  • Dice the slices of tuna and season it with lemon juice, then add it to the vegetables.

  • Make an emulsion by mixing 2 tablespoons of apple cider vinegar, 4-5 tablespoons of extra virgin olive oil, salt, and pepper and dress the vegetables and diced tuna with this sauce.

  • Compose the plates using a pastry ring for each serving and place the portion, garnishing with lemon slices and black olives. A fresh and tasty summer dish… enjoy your tuna tartare with vegetables!
