- 14 oz veal (ground)
- 1 egg
- 2 tbsp breadcrumbs
- 1 sprig chopped parsley
- 4.2 oz cheeses (mixed, I took mozzarella balls, smoked cheese, raspadura from the fridge)
- 1 pepper (grilled)
- 15 cherry tomatoes
- 4.6 spinach, cooked, boiled
- 2 sprigs rosemary
- 1 clove garlic
- to taste extra virgin olive oil
- to taste salt

FOR THE PREPARATION OF THE RECIPE VEAL PINWHEELS WITH SPINACH AND PEPPERS
I place the ground veal in a bowl, add the egg, chopped parsley, breadcrumbs, salt, and pepper.
I mix well to combine everything, then spread this mixture over a sheet of parchment paper, leveling it well to a thickness of just over half an inch.
I add the boiled spinach
and the chosen cheese mix in coarse pieces,
and the grilled pepper cut into strips.
Now I roll it up tightly like a candy with the parchment paper
and then again with aluminum foil.
I take a baking dish, put extra virgin olive oil and a glass of water (or broth or wine or a mix) at the bottom, place the meat roll, and bake at 392°F for about 30/35 minutes, checking and turning the stuffed and minced meat wheel for even cooking.
I plate the veal pinwheel with spinach, cheese, and pepper and serve it immediately for tasting!

I cut the stuffed veal pinwheel into slices of 1/1.5 cm and arrange them without overlapping in the baking dish, add a drizzle of extra virgin olive oil, and allow to finish cooking for another 10 minutes or so.
Meanwhile, if I want as a side dish tossed cherry tomatoes quickly over the fire, I wash and cut cherry tomatoes as desired, and on medium-high heat in the pan, I let them soften by quickly and frequently tossing the preparation.
