Vegan Christmas Bundt Cake

I got the recipe for the vegan Christmas bundt cake from the culinary magazine Eva Cucina, and it is clearly without eggs and butter, while inside, it has plenty of currants that I’ve also used as decoration, with the indispensable powdered sugar!
I am not vegan, but after seeing this recipe, I tried this soft and light cake which clearly follows this lifestyle and approach to food and beyond!
I am not very expert, and I apologize, and that is why I tried to do some research to answer some questions that perhaps some of you have…

Big question: what do vegans eat?
Vegans eat fruits and vegetables, grains and bread, seeds and nuts, and legumes.
What don’t vegans eat? People following this diet do not eat meat, fish, honey, milk and its derivatives, and eggs.

What are the valid alternatives to meat and fish for vegans? There is seitan, derived from wheat gluten processing, tempeh obtained from the fermentation of yellow soybeans, mopur, and even wheat muscle to make totally plant-based stews and roasts!

What do vegans eat instead of cheese? It is nutritional yeast flakes obtained from the processing of brewer’s yeast, used to sprinkle various preparations, while chickpea hummus is used if we need to replace creamy cheese.

And what does a vegan eat instead of eggs? If we talk about whole eggs, we can use bananas, plant-based yogurt, or potato starch. Instead, if we talk about egg whites, there is aquafaba, the liquid from chickpeas with which I made vegan meringues on the blog!

How to replace cow’s milk in a vegan diet?
In this case, we have many substitutes, now called soy beverages, but also millet, oat, and rice.

They seem vegan but are not… Some foods are mistakenly considered suitable for this diet but are not, specifically:
baking powder because it is often added with an animal-derived stabilizer;
some types of wine and beer because one of the filtering methods is isinglass, a special animal gelatine that removes processing residues;
chocolate even though dark chocolate should not contain any, even in minimal part, milk chocolate may contain milk powder or whey;
some types of bread that may have lard or milk in the dough;
certain kinds of candies or chewing gums where sometimes there is animal gelatine called fish glue.

VEGAN CHRISTMAS BUNDT CAKE

Vegan Christmas Ring Cake

Ingredients

  • 12 oz water (warm)
  • 2.5 cups all-purpose flour
  • 1.25 cups sugar (white)
  • 6 tbsps vegetable oil
  • 1 packet cream of tartar (already mixed with baking soda)
  • 1 package currants
  • 3.5 oz dark chocolate (vegan)
  • 1 tbsp soy milk (or rice milk or other vegan options)
  • as needed currants
  • as needed rosemary
  • as needed powdered sugar

Tools

  • Electric whisk
  • Food scale
  • Bowl

Preparation

  • To prepare the vegan Christmas bundt cake, weigh and place the warm water in a bowl.

    Then add the sugar and mix well until it dissolves completely.

  • Next, add the vegetable oil and the sifted flour with baking powder to the mixture.

    Now take the electric mixer without hesitation and quickly mix the ingredients.

  • You need to achieve a smooth batter without lumps or thickening.

    Wash the currants quickly, pat them dry with absorbent paper, and add them to the batter.

    Gently incorporate them using a spatula.

  • Carefully oil the mold and dust it with flour, removing the excess.

    Pour the batter for the vegan Christmas bundt cake into the mold and bake in a preheated oven at 356°F for about 55 minutes, but as always, adjust the time according to YOUR oven, not mine!

  • Sometimes I find comments saying that the cake didn’t cook properly but “I FOLLOWED YOUR RECIPE TO THE LETTER”!

    I’m really sorry, but for my oven, the indicated time is correct for the cake to be well-cooked, and the skewer comes out clean, but again… that’s my oven! Please always consider your appliance, thank you!

  • Once cooked, let the vegan Christmas cake cool completely and in the meantime, melt the dark chocolate with a little bit of soy milk in a bain-marie or in the microwave like I did.

  • Then, using a piping bag, draw swirls with the melted chocolate on my vegan Christmas bundt cake and then sprinkle it with powdered sugar.

    Place some currants and a few fresh rosemary sprigs here and there,

    I like it a lot, haha!
