Today I made a super easy dessert: vegan strawberry and chocolate puddings, lactose-free and gluten-free that you can prepare in advance and are very tasty!
I paired them with some strawberries cut into pieces and left to soften and sweeten a bit more in the pan over very low heat.
Clearly, we can add other fruit according to the season, for example, peaches that will soon be on supermarket shelves go great with chocolate, but also kiwis or bananas!
It’s a homemade spoon dessert that is very easy to make and can be made with other varieties of chocolate to suit our tastes, a spoon dessert to keep in the fridge and that we can decorate with a dollop of cream and maybe a few mint leaves (my plant is slowly regrowing and the one I had in the fridge… was for the trash, alas).
When I was a girl, pudding was a simple dessert my mom often made, even with Cameo packets, but now if I make a dessert even for a snack or an after-meal, I always end up making an English trifle or truffles, and rarely puddings!
I’m not very knowledgeable about the vegan doctrine and precisely for this reason I did some research to answer some questions that intrigued me…
Question: what do vegans eat?
Vegans eat fruits and vegetables, grains and bread, seeds and nuts, and legumes.
What don’t vegans eat? People following this diet don’t eat meat, fish, honey, milk and its derivatives, and eggs.
What alternatives do vegans have to meat and fish? We have seitan derived from wheat gluten processing, tempeh obtained from the fermentation of yellow soybeans, mopur and also wheat muscle for making entirely vegetable stews and roasts!
What can replace cheese for vegans? Nutritional yeast flakes obtained from yeast fermentation are the “cheese” used to sprinkle various preparations, while chickpea hummus is used to replace creamy cheese.
What can a vegan eat instead of eggs? If we talk about whole eggs we can use bananas, plant-based yogurt, or potato starch. If we talk about egg whites, there’s aquafaba, i.e., the liquid in which chickpeas have been cooked, with which I made vegan meringues on the blog!
How to replace cow’s milk in a vegan diet?
In this case, we have many substitutes that are now called soy drinks, but also millet, oat, and rice drinks.
Seem vegan but are not:
1) baking powder because it’s often added with an animal origin stabilizer;
2) some types of wine and beer as one of the filtration methods is isinglass, a special animal-derived gelatin that removes processing residues;
3) chocolate even though in dark chocolate there shouldn’t be even a minimal part of milk chocolate, however, we might find milk powder or whey;
4) some types of bread that can have lard or milk in the dough;
5) certain types of candies or chewing gum where sometimes animal gelatin known as isinglass is present.

Ingredients
- 1 cup almond beverage
- 3 oz dark chocolate
- 1 tbsp cornstarch (or potato starch)
- 2 tbsp maple syrup
- 1 cup strawberries

Steps
1) For this simple vegan recipe of chocolate puddings with strawberries, I start by chopping the dark chocolate or the variety I prefer.
2) I put the almond-flavored beverage with the sweet syrup over moderate heat and as soon as it starts to simmer, I add the fairly fine chopped chocolate and mix well to melt it and to prevent it from sticking to the bottom of the pot.
3) I dissolve the amount of cornstarch in a couple of tablespoons of water and then add it to the chocolatey liquid.
4) Using a whisk, I mix well and let it thicken over low heat: it will take just a few minutes!
5) Once done (we’ll have a smooth, lump-free cream), I turn off the heat and pour the vegan chocolate pudding cream into individual serving cups.
6) While the creamy dark chocolate sauce cools down, I put the strawberry pieces into a small pan over the heat and, while stirring, let them soften and release some juice, sweetening if I prefer with maple syrup.
7) Now, we could blend the strawberries and cover the vegan chocolate cup with this strawberry coulis or simply pour the cut strawberries over the lactose and gluten-free chocolate pudding…
8) I chose to leave the fruits in pieces, covering the whole chocolate cream!
9) I then covered each individual cup with the spoon dessert and placed the dessert in the fridge until it’s time to enjoy it at the table!
