Sometimes I enjoy browsing cooking websites and blogs on the web, especially those in French, a language I adore and, even though my school days are long gone, I always try to keep it alive in my mind, and this is certainly a very pleasant way to do it!
While browsing the web, I found a beautiful blog this and this delicious recipe of the walnut cake with coffee glaze for a perfect dessert for the cold season (which seems to be coming) and very soft, a true delight!
The walnut is a fruit that is very good for the heart and is recommended to be snacked on in small amounts; it is used for creamy sauces for pasta, added to salads and bowls of vegetables and legumes, and so much more!

WALNUT CAKE WITH COFFEE GLAZE

Ingredients WALNUT CAKE WITH COFFEE GLAZE RECIPE
- 5.3 oz walnut kernels (blended as flour)
- 4 medium eggs
- 5.3 oz all-purpose flour
- 5.3 oz sugar
- 1 tbsp instant coffee (dissolved in a little water)
- 2 tsps baking powder
- 5.3 oz butter (soft)
- to taste powdered sugar (for the glaze)
- to taste instant coffee (for the glaze)
- to taste water (added slowly and cautiously for the glaze)
FOR THE PREPARATION OF THE WALNUT CAKE WITH COFFEE GLAZE RECIPE
Separate the egg whites from the yolks and place them in 2 separate bowls.
Whisk the egg whites to soft peaks and set them aside.
Cream the softened butter with the sugar until you obtain a light and fluffy mixture.
Dilute the instant coffee in a small amount of water, then combine it with the egg yolks into the butter mixture.
Continue beating with the electric mixer and add the chopped walnuts using a food processor with pulse mode.
Sift the all-purpose flour with the baking powder and add the dry ingredients to the already made mixture, alternating with the whisked egg whites using a flexible spatula.
You will get a very creamy and fluid mixture that we will pour into a previously buttered and floured baking pan.
Now, bake the walnut cake with coffee glaze in a preheated oven at 356°F, letting it cook for about 40 minutes or according to the characteristics of your appliance.
While the cake cools, preferably on a cake rack, prepare the glaze by putting 3.5-5.3 oz of powdered sugar in a bowl, adding a little instant coffee and running water.
Mix vigorously, adjusting the fluidity of the mixture, and pour it over the surface to entirely cover the cake.
Before it solidifies, place 7/8 half walnut kernels … and it’s so, so good, so…
