Water Bundt Cake with Ginger and Grapes a batter with potato starch that is very soft and slightly spiced, and really so pleasant!
As grapes, I used seedless red grapes that I quickly frosted by passing the grapes in lightly beaten egg white and then generously sprinkled with granulated sugar.

WATER BUNDT CAKE WITH GINGER AND FROSTED GRAPES

Ingredients WATER BUNDT CAKE WITH GINGER AND FROSTED GRAPES
- 5.6 oz Sugar
- 5.3 oz grape berries (+ additional for frosting for decoration)
- 4.8 oz All-purpose flour
- 2 medium eggs
- 2.8 oz vegetable oil (I use corn)
- 1.1 oz potato starch
- 0.21 oz baking powder
- 1 tablespoon fresh ginger (grated)
- as needed butter and flour (for the mold)

FOR THE PREPARATION OF THE WATER BUNDT CAKE WITH GINGER AND FROSTED GRAPES RECIPE
Beat the eggs with the sugar until you get a fluffy and frothy mass. Mix the oil with 80 ml of water and add this liquid mix to the beaten egg mixture.
Now add the fresh ginger finely grated.
Now pour the sifted flour with the potato starch and the baking powder, mixing with a flexible spatula and with movements from bottom to top to avoid deflating everything.
The dough will be very creamy and you might be tempted to think it’s too runny…no no, it’s fine!
Pour it into the buttered and floured mold filling it about 3/4 full.
Now add half of the grape berries cut in half, then the remaining part of the dough.
Place the remaining grapes always cut on top before baking and cook everything in a preheated oven at 340°F for about 45 minutes or according to the characteristics of your appliance.
Once baked, allow the water bundt cake with ginger and grapes to cool completely and in the meantime prepare the frosted grapes as explained at the beginning of the article.
Place the frosted grapes in the hole of the bundt cake and add a dusting of powdered sugar if you like, then serve at the table… Enjoy your meal!! Annalisa
