Preparation RECIPE WEINSTREIFEN VIENNESE COOKIES
On a work surface, mix the flour with the soft butter in pieces, the sugar, the egg, and the grated lemon zest.
Make a dough, let it rest for about 30 minutes.
Afterwards, roll out the dough with a bit of flour to a thickness of about 1/4 inch (maybe a little less, but it is compensated with the icing).
With a fluted wheel or a knife, make many rectangles about 2 inches by 1 inch. Place them directly on the baking sheet lined with parchment paper and then bake at 350°F for about 10 minutes: they should color but not darken too much!
Let them cool completely on a rack, then brush them with a thin layer of raspberry jam mixed with a bit of lemon juice.
For the GLAZE, mix vigorously to avoid lumps, the powdered sugar with the orange juice to have a smooth and homogeneous mixture.
Then spread it over each individual Weinstreinfen Viennese cookie, then let it set before serving and eating these delicious cookies!!!
