After baking these fantastic Weinstreifen Viennese cookies, I thought of not publishing the recipe because let’s be honest, these rectangular cookies with glaze aren’t exactly beautiful, and they’re also shaded underneath, a strange thing let’s admit it eh eh! The fact is that these Weinstreifen are so good, so good that here they are … recipe and photos!!! These rectangular cookies deliciously glazed are easy to make. They just require an additional step for glazing, but I can assure you they are absolutely worth it… Shall we start?? Have I convinced you to make the Weinstreifen Viennese cookies??????

WEINSTREIFEN VIENNESE COOKIES

Ingredients RECIPE WEINSTREIFEN VIENNESE COOKIES
- 2 cups flour
- 9 tbsps butter
- 2/3 cups sugar
- 1 egg
- 1 lemon (zest)
- to taste raspberry jam
- 1 1/4 cups powdered sugar
- 1 tbsp orange juice

Preparation
On a work surface, mix the flour with the softened butter cut into pieces, sugar, egg, and the grated lemon zest.
Make a dough ball and let it rest for about 30 minutes.
After resting, roll out the dough with a little flour to a thickness of about 1/4 inch (I might have done it a bit thinner, but it can be adjusted with the glaze).
With a serrated wheel or a knife, make many rectangles about 2 inches by 1 inch. Place them directly on the baking sheet lined with parchment paper, then bake them at 350°F for about 10 minutes: they should color but not get too dark!
Let them cool completely on a rack, then brush them with a thin layer of raspberry jam mixed with a little lemon juice.
For the GLAZE, vigorously mix the powdered sugar with orange juice to have a smooth and homogeneous mixture without lumps.
Then distribute it over each individual Weinstreinfen Viennese cookies and let it set before serving and enjoying these delightful cookies!!!
