What ingredients for our quick finger food appetizer?
For the breadstick basket, I chose some rustic breadsticks that also serve as bread together with a mix of cold cuts (mortadella, salami, and cooked ham) with cheese (Asiago) and a ricotta and herb mousse.
Of course, you can add whatever you like, but I suggest starting with a basket base made from tender salad such as lamb’s lettuce or corn salad and then add whatever whets your appetite!
Instead of the ricotta mousse, you can use simple creamy cheese or enrich it with a fine chop of basil and parsley, or even robiola, another delicately flavored cheese, mixed with grated parmesan …what do you think????

I confess I initially planned to use Turin-style breadsticks I had at home, but they are too long and too thin, so I ultimately opted for the rustic breadsticks I mentioned earlier.
This is a simple and homemade idea that can help us present an “impressive” preparation that looks good even for a family event like a Christmas lunch and more.

Preparation of the Welcome Basket Recipe with Cold Cuts and Cheeses
To prepare the welcome basket with cold cuts and cheeses, start by arranging on each plate (preferably square-shaped) the rustic breadsticks crossed in a box-like manner, like a basket as seen in the featured photo.
Personally, I preferred not to make the breadstick basket too high and to cross 6 breadsticks per person, which seems optimal to me (the usual modesty, heh heh).
The basket thus low stands on its own, but in case you have thicker breadsticks, put a small amount of ricotta mousse as glue at the intersection of the breadsticks, and they won’t move!
Then, I distributed on the bottom of the plate, oops … the breadstick basket, some tender salad called lamb’s lettuce or corn salad, using a ready-to-use bag of vegetables from Esselunga, although I washed and dried it perfectly.
Then roll up the slices of the various cold cuts as you like; I made some rather sad rolls (sigh sigh)… and placed them on your appetizer.
Then add two slices of cheese choosing one like Asiago, Tuscan Pecorino, Galbanino, let’s say not too aged etc.
FOR THE RICOTTA MOUSSE, mix cow’s milk ricotta with chopped parsley, adding also a little parmesan and adjusting with salt and pepper.
If you prefer, use a ready-made creamy cheese with aromatic herbs directly…
Then add a generous spoonful of seasoned ricotta mousse to our welcome basket with cold cuts and cheeses.
Finally, I chose to add 2/3 pieces of pickled vegetables with some pitted Taggiasca olives from ALDI.
Et voilà the welcome basket with cold cuts and cheeses is ready to be served and brought to the table!
