A new pseudo-preparation — a very clever, super-smart little recipe and quick: the welcome basket with cold cuts and cheeses to put together a starter that is simple yet tasty and that you can customize as you wish!
Which ingredients for our quick finger-food starter?
For the breadstick basket I chose rustic breadsticks which also serve as a side bread, plus a mix of cold cuts (mortadella, salami and cooked ham) with cheese (Asiago) and a ricotta-and-herbs mousse.
Of course you can put whatever you want; I still recommend starting with the basket base made of a tender salad like lamb’s lettuce (mâche) or soncino, and then add whatever most tempts your appetite!
Instead of the ricotta mousse you can use plain cream cheese or one already flavored with a fine chop of basil and parsley, or robiola — another mild cheese — with some grated Parmesan added …what do you think????
Which breadsticks to use for the appetizing basket with mixed cold cuts and cheeses?
I confess I had originally thought about using the Turin-style breadsticks I had at home, but they are too long and too thin, so in the end I went for the rustic breadsticks I mentioned earlier.
This is a simple, homely idea that can nevertheless help you present an impressive plate that looks good even for a family event, such as a Christmas lunch and more.

Preparation of the Welcome Basket with Cold Cuts and Cheeses Recipe
To prepare the welcome basket with cold cuts and cheeses, start by arranging the rustic breadsticks on each plate (preferably square) crossing them like a box or basket, as you can see in the main photo.
Personally I preferred not to make the breadstick basket too tall and crossed 6 breadsticks per person, which honestly seems optimal to me (the usual modesty, eh eh).
A basket this low stays upright on its own but if you have thicker breadsticks, put a little dot of ricotta mousse as glue at the crossing point of the breadsticks and they won’t move!
I then spread on the bottom of the plate — oops… of the breadstick basket — tender salad called lamb’s lettuce (mâche) or soncino or valerianella; I used a bag of ready-to-eat salad from Esselunga, but I still washed and dried it thoroughly.
Roll the slices of the various cold cuts as you like — I made fairly modest little rolls (sigh sigh) — and place them on your starter.
Then place two slices of cheese, choosing a type like Asiago, Tuscan Pecorino, Galbanino — say not too aged, etc.
FOR THE RICOTTA MOUSSE, mix cow’s ricotta with a chopped handful of parsley and add a little grated Parmesan if you like, then season with salt and pepper to taste.
If you prefer, use a ready-made herb-flavored cream cheese instead…
Add then a generous tablespoon of the seasoned ricotta mousse onto our welcome basket of cold cuts and cheeses.
Finally I chose to add 2/3 pieces of preserved vegetables with a few pitted Taggiasca olives from ALDI.
Et voilà — the welcome basket with cold cuts and cheeses is ready to be served and taken to the table!
