The whole spelt cake with strawberries and bananas is a dessert made with whole spelt flour and has a distinctive, intense flavor.
Spelt flour (spelt) contains fewer sugars than common wheat flour, which makes it much easier to digest and particularly suitable for preparing bread, pastries and pasta.
It has a distinctive, intense aroma, almost like dried fruit or nuts; the most prized variety comes from the Garfagnana area of Tuscany and has obtained the IGP mark.
This cake MADE WITH WHOLE FLOUR contains slices of banana inside and is decorated on the surface, as you can see, with firm ripe strawberries cut into wedges — follow along as we prepare this delicious whole spelt cake with strawberries and bananas!

Ingredients RECIPE WHOLE SPELT CAKE WITH STRAWBERRIES AND BANANAS
- 1 1/4 cups whole spelt flour
- 1 1/4 cups all-purpose flour
- 10 strawberries
- 1 banana
- cup (4.2 oz / 120 g) granulated sugar
- 1/4 cup (4 tbsp / 2.1 oz / 60 g) butter
- 3 eggs
- 1/4 cup (2 fl oz / 60 ml) milk
- 1 unwaxed lemon (zest and juice)
- 1 packet baking powder
- to taste honey (I used acacia)
- to taste powdered sugar (for decoration)

Preparation
Wash the strawberries, remove the stems and cut them into wedges.
Place them in a bowl and drizzle with the juice of half a lemon (unwaxed).
Pour the batter into the buttered and floured pan or lined with wet and wrung-out parchment paper.
Arrange the strawberry wedges on the surface of the whole spelt cake without pressing them into the batter. Bake the cake made with whole spelt flour in a preheated oven at 356°F for about 40/45 minutes or according to your oven’s characteristics.
Once baked (always check with a toothpick), let cool and remove from the oven. Carefully unmold, dust with powdered sugar and serve! Rustic and very special — enjoy your whole spelt cake with strawberries and bananas!

Peel the banana, slice it into not-too-thin rounds and toss them with the juice of the remaining lemon.
Sweeten both the banana slices and the strawberries with a little honey and place the fruit in the refrigerator.
Sift the whole spelt flour with the all-purpose flour and the baking powder. Melt the butter.
Beat the eggs with the sugar, adding the grated lemon zest.
When you have a light and frothy mixture, gradually add the sifted dry ingredients, alternating with melted butter and milk.
Finally add the banana slices, folding them into the batter.
Pour the batter into the buttered and floured pan or lined with wet and wrung-out parchment paper.
Arrange the strawberry wedges on the surface of the whole spelt cake without pressing them into the batter.
