Winter Chicken Salad

Chicken salads, whether winter or not, are excellent fridge-clearing dishes and help reduce waste because we can use grilled chicken, boiled chicken, roasted chicken, basically any piece of chicken cooked in any way!

The winter version of chicken salad includes the addition of some broccoli florets, red beans, chickpeas, champignon mushrooms simply sautéed with garlic and plenty of pomegranate seeds that add a touch of color and are beneficial to health, especially for the heart.

They are rich in antioxidants, especially polyphenols and flavonoids, which protect the heart, reduce inflammation, and lower blood pressure.

Chicken salads can be prepared with all the ingredients we like most, and we can say the same for the dressing that will enhance them.

We can make a classic vinaigrette with olive oil, vinegar or lemon, salt, and pepper, or a yogurt dressing but also a mustard sauce with oil, salt, pepper, and a bit of mayonnaise perhaps made quickly with an immersion blender.

The winter chicken salad or summer version is perfect for a quick lunch break; we can put it in an airtight container and eat it at the office or prepare it for a buffet at a dinner with friends, but it’s also great if prepared in advance for that day when between kids, school, work, and who knows what else, we don’t have a second to prepare the family’s dinner!

If you don’t like broccoli, you can use slices of boiled or baked pumpkin or boiled potatoes or other options!

In summer, a delicious CHICKEN SALAD can be prepared with celery, hard-boiled eggs, bell peppers, grilled vegetables, but also olives and capers.

  • 1 chicken breast

FOR THE PREPARATION OF THE WINTER CHICKEN SALAD RECIPE

  • This winter chicken salad is very, very easy!

    I clean the chicken from any fat residues and the central bone, then cut it in half and grill it on a hot griddle, cooking it well on both sides.

  • Meanwhile, I remove the pomegranate seeds with disposable gloves, drain the red beans and boiled chickpeas, rinsing them under running water and placing them in the bowl that will go to the table.
    Once the chicken is cooked well, I slice it diagonally and let it cool, then add it to the bowl.

  • With a drizzle of EVO oil and a clove of garlic, I sautéed the washed and sliced common mushrooms quickly, leaving them in the pan for about 7/8 minutes.
    I drain them from the liquid and add them warm to the other ingredients of the winter chicken salad.

  • Personally, I seasoned with EVO oil, salt, a bit of chili flakes, and a splash of white wine vinegar.
    Here is the winter chicken salad ready, which I serve immediately at the table!
