Yogurt Cake with Grapes and Figs

The yogurt cake with grapes and figs is a very, very soft dessert without butter and does not require electric beaters. A spoon is enough and off you go!

It’s a homemade and genuine cake that even a child could make, and using sweet grapes and ripe figs results in a seasonal delight for the whole family!

If there’s any left, let’s keep it covered with plastic wrap in the fridge; it will keep for 3/4 days and will be delicious with a glass of milk or fruit juice!

Ingredients for YOGURT CAKE WITH GRAPES AND FIGS

  • 1 egg
  • 1/4 cup vegetable oil
  • 1/3 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/3 cup plain yogurt
  • 2 tsp baking powder
  • 1 bunch white grapes (I used about 15 grapes)
  • 1 packet pistachio granules
  • 1 packet brown sugar
  • 4 figs

PREPARATION FOR THE YOGURT CAKE WITH GRAPES AND FIGS

  • In a bowl, I put the egg, sugar, and plain yogurt and simply mix these ingredients with a spoon.

    I also add the vegetable oil and mix the rather fluid mixture again.

  • Now I add the sifted baking powder with the flour and mix vigorously to ensure there are no lumps in the batter.

    I wash and dry the grape berries—mine were firm but with seeds… you choose the one you prefer, okay? I peel the figs (and maybe I made a mistake because they were ripe and later dispersed in the batter) and add them in pieces to the batter, which I then pour into the 20 cm loaf pan already oiled and floured.

    At this point, I decided to add the pistachio granules and the packet of brown sugar to the cake and…

  • I bake in a preheated oven at 340°F for 35/40 minutes, but as always, visually check and use a toothpick test to ensure it is cooked!

    Here, after 20 minutes, a smell of baked cake rose that warned me, and when I went to check the oven, the grape and fig cake had already cracked a little on the surface, and shortly after, I took it out of the oven!

So… could I have added more grapes? Absolutely yes!

Could I have added an aroma? Yes, perhaps a zest of organic or untreated lemon.

Could I have removed pistachios and brown sugar? Yes, definitely, perhaps adding classic sugar crystals or nothing at all and dusting with powdered sugar later!
