ZUCCHINI AND SALMON LAYERED CASSEROLE

Zucchini and Salmon Layered Casserole is a very appetizing unique dish, also delicious at room temperature which makes it suitable for the summer season when it eventually arrives!

The smoked salmon is a very versatile food for a quick and tasty dressing for a first course, for making a simple salad with fennel and capers, and for classic appetizers with toasted bread and a touch of butter.

Today, I cooked it in this tasty casserole with zucchini for a flavorful and savory second course!

Zucchini and Salmon Layered Casserole

Ingredients for ZUCCHINI AND SALMON LAYERED CASSEROLE RECIPE

  • 7 oz smoked salmon
  • 4 medium zucchini
  • 2 eggs
  • 7 oz thin slices of mozzarella
  • 0.85 cups cooking cream
  • to taste salt and pepper

Tools for ZUCCHINI AND SALMON LAYERED CASSEROLE RECIPE

  • Mandoline
  • Baking Tray
  • Knife

FOR THE PREPARATION OF THE ZUCCHINI AND SALMON LAYERED CASSEROLE RECIPE

  • Wash and trim the zucchini and cut them into thin slices, preferably with the mandoline.

    In a bowl, beat the eggs with the cream and season with salt (a little) and pepper.

  • Start preparing the savory layered casserole by placing a first layer of thin slices of zucchini in the baking tray (6 x 8 inches).

    Then add the smoked salmon and slices of mozzarella.

  • Continue layering until the ingredients are used up, then pour over the cream and egg mixture.

    Bake in a preheated oven at 375/390°F for about 45 minutes or according to your appliance.

  • After baking, let the zucchini and salmon layered casserole cool slightly and then serve it at the table. Enjoy this delicious casserole!

Tips and Notes

The zucchini and salmon layered casserole is a unique dish that’s not too high in calories and very tasty, perfect for a satisfying meal. It’s also very easy to make and can be prepared in advance to be cooked at the last moment.

P.S. Zucchini is a low-calorie vegetable full of water, which will release during baking, so not much liquid is needed…
