Zucchini Caviar

And after the pepper caviar, a very tasty preparation and appetizing for bruschetta and various condiments, today I prepared the recipe for zucchini caviar with a more delicate, simple taste, and if served in small glasses, beautiful to present at buffets and summer dinners.

It will also be excellent if served in small Parmesan wafers while I simply accompanied it with slices of crispy baguette.

The taste is very delicate, light, and if you want to make it more flavorful you can put a small dice of sun-dried tomatoes in oil on each crostino or a dollop of gorgonzola or robiola.

Ingredients ZUCCHINI CAVIAR RECIPE

  • 10.5 oz zucchini
  • 1 shallot (small)
  • 2 tablespoons extra virgin olive oil
  • to taste thyme
  • to taste basil
  • to taste mint
  • to taste fine salt
  • to taste black pepper

Preparation ZUCCHINI CAVIAR RECIPE

  • Chop the shallot and stew it in a little oil over moderate heat. Then add the washed, dried, and sliced zucchini.

  • Try to make slices of the same thickness so they will cook in the same time even though it will all be blended with the immersion mixer later.

  • Sauté them for 10/15 minutes without burning the shallot.

    Add now the thyme, basil, and a few mint leaves.

    Season with salt and pepper, give the preparation one last toss and turn off the heat.

  • Put the zucchini in a blender glass and reduce the mixture to a puree with the immersion mixer.

  • Serve with toasted bread crostini and hot… or use the zucchini caviar to season penne or other short pasta.

They have a very basic taste that requires strong combinations to have a more decisive flavor.
