Zucchini pancakes for an appetizer or to accompany savory mousses!
These little fritters are quick and very fluffy, and you can season them with herbs.
For example, I used a chop of mint, but thyme also works well, haha!
I used all-purpose flour, but you can substitute it with buckwheat flour for a more rustic and delicious taste!
You can add a pinch of turmeric for an exotic and tasty touch!
For an even more delicate batter, you can add a nice touch of ricotta and add the milk last to better adjust the consistency of the zucchini batter, which should be fluid and not too thick!
If you want to make perfect zucchini pancakes, you can pour the batter into small, lightly oiled pastry rings to make perfect circles!

Ingredients
- 5 oz zucchini
- 3 oz milk
- 1/2 cup all-purpose flour
- 1 tsp instant yeast for savory
- 1 egg (medium)
- to taste mint
- to taste salt
- to taste pepper
Preparation
For zucchini pancakes, first wash and trim the vegetable.
Using a coarse grater, grate the zucchini into julienne strips and use your fingers to squeeze out the water they contain!
In a bowl, add the squeezed zucchini, the flour, the egg, and the flour with instant yeast for savory.

Put the non-stick pan on the heat, and when it is hot, pour a ladle of the zucchini pancake batter.
After 1 minute, flip the zucchini fritter to the other side and finish cooking.

Serve the savory zucchini pancakes with savory mousses with squacquerone and cold cuts as an appetizer.
