ZUCCHINI STUFFED ROLLS

Zucchini stuffed rolls, small bites with thin slices of raw zucchini filled with a creamy sauce of robiola, then rolled and lightly seasoned with a drop of oil and some false peppercorns or pink peppercorns.

These QUICK APPETIZERS can be prepared a few hours before the meal and are delightful, perfect for a savory buffet. I know it’s a tiny recipe but it’s very tasty, let’s get into the kitchen if you like…

Zucchini Stuffed Rolls

Ingredients for ZUCCHINI STUFFED ROLLS

  • 2 zucchini
  • 7 oz robiola cheese
  • as needed pink peppercorns
  • as needed extra virgin olive oil
  • as needed salt

  • Mandoline

Preparation of ZUCCHINI STUFFED ROLLS RECIPE

  • Wash the zucchinis and with a mandoline or a peeler, slice them thinly lengthwise.

  • Mix the robiola well, softening it with a little olive oil and seasoning it with salt and pepper.

  • Spread a bit of ROBIOLA cream on the zucchini slices and roll them up, securing with a toothpick.

  • Salt, pepper, add some pink peppercorns (I like them and I overdid it as you can see) and if you do not use this zucchini stuffed rolls appetizer immediately, cover with plastic wrap and leave in the refrigerator.

  • Before serving, remove the wrap, add a dash of olive oil, and bring to the table! Enjoy your zucchini stuffed rolls!

I used thin slices of raw zucchini, but if you prefer, you can grill them and then fill them with the robiola cream…
