It often happens that fritters, once out of the oil, become soft and lose their outer crispness. This happens when the batter is not balanced or not cold enough.
These Apple Fritters from Trentino-Alto Adige are the Carnival (and not only) dessert you were looking for: crispy outside, soft inside and aromatic thanks to cinnamon.
Today I’ll reveal the essential trick for a long-lasting crispy batter: the use of Rum and cold liquid ingredients.
The recipe is easy and quick and uses apples cut into round slices. You’ll also find instructions for how to cook Apple Fritters in an Air Fryer or in the Oven.

Ingredients For about 18 fritters
- 1 1/8 cup all-purpose flour
- 1/2 packet baking powder
- 1 egg
- 1 tbsp granulated sugar
- 1/2 lemon zest
- to taste ground cinnamon
- 1 pinch salt
- 1/3 cup milk
- to taste vanilla extract
- 1/3 cup water
- 3 1/3 tbsp rum
- 3 apples
- to taste all-purpose flour
- 4 1/4 cups vegetable oil (for frying)

Method APPLE FRITTERS WITH BATTER
Cold Liquids: In a bowl pour the whole egg, the sugar, the lemon zest, the cinnamon, the salt and the vanilla. Mix with a whisk.
Add Flour: Add the cold milk, the flour and the sifted baking powder, continuing to mix.
The Trick: Pour in the water and the Rum. Mix with the whisk until you obtain a very smooth batter.
Rest (Essential): Let the batter rest in the fridge for at least 20 minutes. This rest and the use of cold liquid ingredients are essential for the final crispiness!Prepare the Apples: Peel the apples only just before frying to prevent them from browning. Remove the core with an apple corer and slice into thick round slices (about 6 slices per apple).
Dust with Flour: Dip each apple slice first in a small bowl containing flour.
Batter: Pass the slices through the batter, using two spoons to coat them evenly.
Frying: Heat the peanut oil in a pot, bringing it to about 338 °F. Place the fritters in the oil and keep them moving with a slotted spoon for about 1 minute per side.
To Serve: When the fritters are nicely golden, drain them on paper towels and dust immediately with powdered sugar. Enjoy them hot!
If you want to avoid frying, you can opt for the oven. Preheat the oven in conventional mode to 392 °F. Line a baking tray with parchment paper and arrange the fritters leaving space between them. To ensure an external crispness, it is essential to brush them lightly with melted butter (or vegetable oil) before baking. Bake for about 15-20 minutes, turning halfway through, until they are nicely golden. As soon as they come out of the oven, roll them immediately in sugar and cinnamon.
The air fryer is the best option to simulate the crispness of frying. Preheat the air fryer to 356 °F. Spray the basket with a non-stick spray or line it with suitable parchment. Arrange the fritters without overlapping. Cook for a total of 10-12 minutes, spraying the surface with an oil spray after the first 5 minutes and turning them over. The oil spray is essential to activate browning and crispness. Serve hot, sprinkled with powdered sugar or cinnamon.
