Ingredients for perfect banana pancakes
Here’s what you need to make delicious banana pancakes:
- 1 banana (ripe 150 g pulp)
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 cup whole milk
- 3.5 tbsps butter
- 1 egg (medium)
- 1 tsp baking powder
- to taste butter
- dark chocolate
- maple syrup (or honey)
- fresh fruit
Tools
- Bowl
- Fork
- Hand whisk
- Pan
- Blender
Step-by-step procedure for banana pancakes
To prepare the banana pancakes, first melt the butter in a saucepan and let it cool.
Peel the banana and obtain 150 g of pulp, then cut it into pieces, finally transfer it to a bowl and mash it with a fork until it becomes a cream. Add the milk, egg, and melted butter that has cooled in the meantime, mix with a hand whisk. In another bowl, pour the dry ingredients: sifted flour with baking powder and sugar and mix. Finally, pour the egg mixture into the bowl with the dry ingredients and blend with the hand whisk to obtain a homogeneous batter,
Lightly grease a non-stick pan and put it on the heat. Pour 2 spoonfuls of pancake batter in the center, spreading it slightly with the back of a spoon to obtain a pancake disc about 4 inches in diameter. Cook over medium-low heat for about 2 minutes, you should see bubbles forming on the surface. At this point, flip the pancakes to the other side and cook until golden (about 1-2 minutes).
As soon as they are ready, transfer the pancakes to a plate stacking them to keep them moist and prevent them from drying out. Depending on the size of the pan, you can also cook more pancakes at once. To serve them, create a tower with 3-4 pancakes and garnish with fresh fruit (I used banana), maple syrup or honey, and for a more indulgent version, you can add hazelnut crumbs or chocolate shavings.
STORAGE
Once ready, it is recommended to consume the banana pancakes immediately. Alternatively, you can store them in the refrigerator for up to 1 day in an airtight container. Freezing is not recommended.
DELICIOUS BANANA PANCAKE VARIANTS
Banana pancakes with extra ingredients: nuts, chocolate, and more
To make your banana pancakes even more special, try adding chopped nuts, chocolate chips, or even a pinch of cinnamon. These extra ingredients can transform a simple breakfast into a real feast!
VARIANTS AND SUBSTITUTIONS FOR DIETARY NEEDS (gluten-free, vegan, etc.)
Gluten-free: Replace the flour with a gluten-free flour mix.
Vegan: Use an egg substitute like “chia egg” (1 tablespoon of chia seeds mixed with 3 tablespoons of water) and plant-based milk.
Reduced sugar: You can omit the sugar and use only ripe bananas to sweeten.
Tips for choosing the right bananas
To get perfect banana pancakes, choose ripe bananas, with yellow skin and brown spots. These bananas are sweeter and mash easily, making the batter smoother.
How to achieve fluffy and golden pancakes
To get fluffy pancakes, do not overmix the batter. Also, make sure the pan is hot enough before adding the batter, so the pancakes cook evenly.
Common mistakes to avoid and how to fix them
A common mistake is cooking pancakes on too high a heat, which can burn them on the outside and leave them raw inside. If you notice your pancakes aren’t browning, reduce the temperature and cook them longer.
