BELLINI DRINKS famous all-Italian cocktail
The BELLINI DRINKS is a famous Italian cocktail, now known worldwide, created in 1948 by Giuseppe Cipriani, owner of Harry’s Bar in Venice on the occasion of the “Giambellino,” the exhibition dedicated to Giovanni Bellini.
This fresh and light cocktail is based on white peach puree and Prosecco and is really simple to make at home, especially if you follow the tips of a professional Milanese bartender I interviewed for you.
The iconic, refreshing BELLINI BELLINI (as it is sometimes called) is perfect as an aperitif in the summer when peaches are in season. Do not be tempted to make it with canned peaches or, worse, peach-flavored vodka because the result you get is light-years away from the true BELLINI COCKTAIL!
As tools to prepare it, if you can, equip yourself with a jigger (the doser used by bartenders) and a Bar Spoon (the long-handle spoon), but if you don’t have them, it doesn’t matter.
Then, if you like, for the preparation of the BELLINI DRINK, you can decide to blend two or three raspberries with the peaches to brighten up the final color. Actually, in the original Bellini recipe, the peaches should not be blended but crushed in a sieve to extract the nectar; however, for convenience, you can blend the fruit, making sure to consume the cocktail immediately otherwise the peach nectar oxidizes.
And now, follow the recipe step by step to prepare the best Bellini cocktail aperitif at home. You’ll see that it only takes 10 minutes.

Ingredients

  • 3 oz Prosecco (Brut)
  • 1.5 oz white peach (puree)
  • as needed ice (to chill the glass)
  • Half slice white peach (for decoration)

Tools

  • Glass
  • Strainer
  • Spoon

Steps

  • I recommend, if you can, to chill the flutes before making the Bellini by placing 2-3 ice cubes inside each, then obviously remove them. At this point, crush or blend the white peach flesh and pour 1.5 oz per person into the jigger (or directly into the glass). Also add half the Prosecco and stir with the appropriate bar spoon from top to bottom. Add the other half of the Prosecco this time without stirring, until filled. Your Bellini Bellini is ready to be enjoyed!

NOTES

To make the white peach puree needed for the BELLINI at home, simply blend the peach flesh with lemon juice and liquid sugar (a water and sugar syrup will work just fine).
