BREAKFAST WITH FIT GREEK YOGURT

When the heat arrives, the classic breakfast with coffee and milk just doesn’t appeal to me. I crave something fresh to start the day well.

I often choose to consume fruit accompanied with yogurt, and the most popular in my house is Greek yogurt, but I also like having something “solid” to bite into, otherwise, I become grumpy from hunger by 10 AM…

And so Fit Ice Cream Sandwich Cookies with Greek yogurt for breakfast are just what I need!

I love Greek yogurt because it’s healthy, contains little sugar and fat, is nutritious yet light, and above all, super versatile! In fact, you can get creative and create different combinations, and that’s why today we’re going to see an idea to prepare a tasty breakfast with Greek yogurt.

Today’s recipe is very easy to prepare, super fresh (it tastes like ice cream!) but above all delicious: I am sure that if you try it, you will be looking forward to the morning to enjoy it!

We know ice cream sandwiches are one of the most delicious desserts you can eat, but they often contain a lot of fats and sugars, so why not prepare these Fake Ice Cream Sandwich Cookies with Greek Yogurt and chocolate chips at home?

I used Digestive Cookies, but you can replace them with what you have at home; a great alternative is Gran Cereali, while the internal filling is made with 0% fat plain Greek yogurt to which I mixed sweetener (or powdered sugar), vanilla essence, and chocolate chips.

Ingredients

  • 8 Digestive Cookies
  • 300 g 0% fat Greek yogurt
  • 4.2 oz cream cheese (light or Greek yogurt)
  • 1/2 tablespoon vanilla essence
  • 1 tablespoon erythritol (or powdered sugar)
  • 2.8 oz dark chocolate chips
  • milk (to soak cookies)

Steps

  • Pour the Greek Yogurt and cream cheese into a bowl, add the vanilla essence and the sweetener (or sugar). Work it with a spoon, then add the chocolate chips and stir to incorporate.

  • Take a baking tray or plate and line it with parchment paper. Place a round pastry cutter, insert the cookie inside and slightly soak it with milk. Pour the Greek Yogurt mixture inside and level with the back of a teaspoon. Finish with the second cookie. Continue this way until you finish the 4 Ice Cream Sandwich Cookies. Put them in the fridge to set for at least 2 hours. Remember to take them out of the freezer about 15 minutes before enjoying.

NOTES

COOKIES: For this recipe, I used Digestive, but any type of cookie, even shortbread, will work. A great alternative is Gran Cereali.

YOGURT: The ideal yogurt is strained Greek yogurt because it’s thicker and less liquid. If you prefer a different flavor than natural, feel free to choose what you like best, the recipe will still work.

CREAM CHEESE: It is not essential to add it to the rest of the mixture, you can also use just Greek yogurt as long as the total grams of ingredients remain unchanged (either just yogurt or yogurt and cream cheese).

SWEETENER: If you don’t have any dietary restrictions, you can use powdered sugar or a tablespoon of honey instead of the sweetener.

CHOCOLATE CHIPS: The combination of natural yogurt and chocolate chips is spot on. However, if you prefer fruit-flavored yogurt, you can enrich your Ice Cream Sandwich Cookies with pieces of fruit of the same flavor as the yogurt you’ve chosen.

STORAGE

The ice cream sandwiches prepared with Greek yogurt and chocolate chips can be stored in the freezer for about 1 week.
