Chicken breast bites with mushrooms
An easy and quick recipe made in a few simple steps with simple ingredients; you’ll only need chicken slices and mushrooms to bring to the table a tasty main course that everyone will love.
In addition, with this recipe you’ll simultaneously cook a delicious dish and its rich mushroom accompaniment, making it complete.
Chicken meat, with its delicate flavor and tender texture, is an excellent substitute for beef or pork, especially for those who don’t like red meat and want to keep things light.
I used porcini mushrooms, but you can replace them with champignon mushrooms, which are tender and have a delicate taste.
If fresh mushrooms are not available, you can use dried or frozen mushrooms.

Ingredients
- 1.5 lb Chicken breast
- 3.5 cups Porcini mushrooms
- 3 tbsp Extra virgin olive oil
- 1 clove Garlic
- Half glass White wine
- to taste Parsley
- as needed Flour

Preparation
First of all, clean the mushrooms. For perfect cleaning read HOW TO CLEAN MUSHROOMS.
Then take the chicken breast slices, place them on a cutting board and cut them first into strips and then into cubes.
Put the flour on a plate and coat the chicken pieces well. In the meantime, pour two tablespoons of extra virgin olive oil into a nonstick pan and let it heat. Add the whole clove of garlic. At this point, cook the mushrooms, which you will have previously cut into cubes as well, for about 10 minutes. Once cooked, remove them from the pan and set them aside. Also remove the garlic.
In the same pan used for the mushrooms add one tablespoon of oil and brown the chicken bites for about 10 minutes. Season with salt and pepper and add the mushrooms you had set aside. Deglaze with half a glass of white wine over high heat for 2 minutes. Turn off the heat, sprinkle with a little chopped parsley and serve!
STORAGE
Once ready, this dish can be stored in the refrigerator for up to 2 days.
I have also tried freezing it and, although it is obviously best when freshly made, it can still be useful if one day you don’t know what to cook and the fridge is empty.
TIPS AND VARIATIONS
You can replace chicken with turkey meat or use red meat.
Instead of porcini, pioppini or champignon mushrooms also work well.
And if you don’t have fresh mushrooms available you can also use frozen ones, perhaps with the addition of a few fresh porcini for a more intense flavor.
