HOW TO COOK CHICKEN BREAST PIZZAIOLA IN AIR FRYER
Chicken pizzaiola is a tasty main dish, one of those recipes that pleases everyone, both adults and kids.
Usually prepared in a pan or oven, but perhaps you didn’t know that with the help of the air fryer, you can achieve an equally tasty version of Chicken Pizzaiola, but lighter.
Certainly, the breaded cutlet is a classic and irresistible main dish, but we don’t always have the desire or time to fry. Cooking chicken breast pizzaiola in the air fryer allows us to serve delicious and tasty slices in no time, yet light, and while they cook, we have time to focus on other dishes.
This recipe combines tender chicken breast with a well-seasoned tomato sauce and melted mozzarella. The result is succulent chicken pizzaiola with perfect consistency.
Like all traditional recipes, there are several ways to prepare Chicken Pizzaiola: some cook the chicken slices plain and then add the sauce, while others coat them. I opted for a simple breading made of breadcrumbs, grated cheese, parsley, salt, and pepper.
You’ll see how in no time your air-fried chicken cutlets will be ready to enjoy, perfect to serve on any occasion and enjoyed with a side of potatoes or vegetables.

HOW TO COOK CHICKEN BREAST PIZZAIOLA IN AIR FRYER
Mix in a bowl: breadcrumbs, grated cheese, chopped parsley, salt, and a pinch of pepper to obtain a uniform breading. Crack an egg in a shallow dish and beat it with a fork.
Dip the chicken breast slices first in the beaten egg and then in the bowl with the breading, coating them well.Place the chicken cutlets in the air fryer basket, if desired you can spray a little olive oil, and cook at 400°F for about 10 minutes.
Meanwhile, mix the tomato sauce, oregano, garlic powder, and a pinch of salt in a bowl. Cut the mozzarella into small cubes or grate it.
Once the chicken cutlets are cooked, open the basket and put a tablespoon of sauce on each slice. Then add a little grated mozzarella, sprinkle with grated parmesan, and cook at the same temperature for another 2 minutes or until the cheese is nicely melted. Your CHICKEN BREAST pizzaiola in the air fryer is ready to be enjoyed hot, sprinkled to taste with chopped parsley.
NOTES
CHICKEN BREAST: To prepare chicken cutlets in the air fryer, we need to buy slices that are neither too thin nor too thick. An important thing is to try to keep a uniform thickness between the slices, to have optimal cooking. The ideal thickness is about half an inch.
MOZZARELLA: Pizza mozzarella is better for this preparation because it does not release water during cooking.
BREADING: The breading can be flavored with the spices and herbs you prefer such as rosemary, oregano, chili, garlic, or even grated lemon zest.
TIP: Be careful not to cover the air fryer basket with parchment paper, otherwise the cutlets will not cook well underneath.
HOW TO COOK CHICKEN PIZZAIOLA IN A TRADITIONAL OVEN
Chicken pizzaiola can also be cooked in a traditional static oven at 375°F for about 15 minutes and then seasoned with tomato and mozzarella and cooked for another 5 minutes.
HOW TO SERVE CHICKEN PIZZAIOLA CUTLETS
You can accompany the chicken pizzaiola cutlets in the air fryer with the side dish of your choice such as baked potatoes or vegetables or even a simple salad. In this case, since there is a tomato and mozzarella garnish, classic condiments for cutlets such as mayonnaise and ketchup are not particularly suitable.
STORAGE
Chicken pizzaiola can be stored in the refrigerator for a couple of days. We recommend reheating it before serving so that the mozzarella becomes melty again.
