The beauty of mug cakes is that they are perfect for when we suddenly crave something sweet but don’t have any at home and don’t feel like turning on the oven or spending hours cooking.
This recipe draws inspiration from Mug Cakes to quickly prepare a kind of CHOCOLATE SOUFFLÉ that puffs up and doesn’t deflate with very little effort and just two minutes of cooking! With a few ingredients like banana, unsweetened cocoa, 1 egg, and a pinch of baking powder, thanks to a very quick batter, prepared by hand, and only dirtying one bowl, we can create delicious small cakes to cook directly in the microwave.
A delicious dessert that has nothing to envy to traditional oven-baked desserts and does not contain flour, fats, or sugar, making it very light and suitable for those following a diet but occasionally want to indulge in a treat.

Ingredients

- 0.25 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1 egg
- 1 tsp granulated sugar (or optional sweetener)
- to taste dark chocolate chips

Steps
Peel the banana, slice it, and place it in a small bowl. Mash it into a puree with a fork. Add unsweetened cocoa, baking powder, and 1 egg, and mix with a spoon or spatula to make the mixture homogeneous.
Transfer everything into a breakfast mug or a microwave mold (I used a square glass one, 5.5 inches per side). If desired, decorate the surface with dark chocolate chips. Cook in the microwave at maximum power for 2 minutes. Enjoy it immediately while still warm; it will feel like eating a chocolate soufflé!
NOTES
BANANA: Use only ripe bananas. Even if they have a few spots, they are still good. If they are too unripe, the preparation will suffer in terms of texture and taste.
SUGAR: This mug cake isn’t particularly sweet without added sugars. If you prefer, you can add 1 teaspoon of sugar or sweetener to the batter (my son prefers it this way, but I’ll leave the choice to you).
COCOA: For this recipe, you can choose the cocoa you prefer, stronger or milder, and flavor it with nuts like walnuts or coarsely chopped hazelnuts.
COOKING: Cooking times may vary by 1 additional minute depending on the microwave model. The first time, I recommend trying for 2 minutes and then doing the toothpick test to ensure it’s cooked. If necessary, continue for 1 minute at a time but no more than a total of 3 minutes.
VARIATIONS: To make this dessert even more delicious, you can prepare a chocolate “ganache” and pour it on top once cooked. Just put 1 oz of fresh liquid cream in a saucepan and heat it. Then remove the hot cream from the stove, add chopped dark chocolate, and stir until completely melted.
STORAGE
I recommend eating the Microwave Mug Cake immediately to appreciate its texture and aroma. However, you can store it in the refrigerator for 24 hours.
