Today I present to you this Breakfast recipe with Oats, Milk, and Greek Yogurt, a sort of Porridge that is prepared in no time, rich in energy and taste, the COCOA OVERNIGHT OATS PORRIDGE.
The Overnight Porridge is a variant of the classic Anglo-Saxon recipe that does not require cooking, perfect for those who have little time or do not feel like cooking. It is prepared in advance, usually the night before, left in the refrigerator overnight, and ready to be enjoyed with your favorite topping when you wake up.
An easy recipe: oats are mixed with milk or water, Greek yogurt, flavored to taste with vanilla, and sweetened with honey. Once mixed, the mixture does not need to be cooked; it should simply be placed in the fridge to rest for at least 4 hours, preferably overnight.

Once ready, you just have to choose whether to layer it or not with your favorite yogurt, spreadable creams, and garnish it with the Topping you prefer because there are endless delicious possibilities.

In today’s recipe for OVERNIGHT OATS with COCOA, I created a first layer by adding cocoa powder to the Porridge, a second with 0% Greek yogurt to which I added a teaspoon of cocoa and a bit of honey, a third layer of vanilla Greek yogurt, and simply finished by dusting everything with unsweetened cocoa.

  • 3.4 oz water (or plant-based drink or cow's milk)

  • 4.23 oz 0% fat Greek yogurt
  • 2.47 oz 0% fat Greek yogurt

  • 1/2 tsp honey
  • 2.47 oz 0% fat Greek yogurt (vanilla flavored)

HOW TO PREPARE THE NO-COOK PORRIDGE

  • In a bowl, mix together oats, honey, yogurt, and almond milk (or cow’s milk or other plant-based drink) until combined. Transfer the mixture into a single-serving cup and refrigerate for at least 4 hours, preferably overnight. After resting, take the porridge and add 1 teaspoon of cocoa powder, then mix to combine.

  • Proceed with the second layer by placing 2.47 oz of Greek yogurt in a bowl along with 1 teaspoon of unsweetened cocoa and ½ teaspoon of honey, mix to combine. Pour everything over the porridge layer and level with the back of a spoon.

  • Create a third layer by simply pouring vanilla-flavored Greek yogurt over the cocoa one and also level the surface with the back of a spoon. You can enjoy your no-cook cocoa porridge like this, or dust it with unsweetened cocoa or if you want to make it super indulgent, melt 1 oz of milk chocolate in the microwave with 1 tsp of coconut oil and spread it evenly over the yogurt layer. Leave in the fridge to solidify for a couple of minutes.  

NOTES

WATER To have an even creamier porridge, you can replace water with an equal amount of cow’s milk or plant-based drink (soy, almond, oat, rice).

HONEY You can replace the honey with maple syrup or with a sweetener for a light version.

VANILLA It’s amazing how a pinch of this essence can improve the taste of your Porridge but if you don’t like this spice you can omit it.

OVERNIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably overnight. This allows the flavors to meld and the oats to soften to the perfect consistency.

COCOA: Obviously this version of Porridge is all about cocoa but if you prefer, or for a change, you can replace it with coffee. In this case, you will only need to add a teaspoon of espresso coffee to the porridge base, for the second layer mix the yogurt with half a cup of (cold) coffee and finish with the third vanilla layer. Decaffeinated coffee is also fine and alternatively, if you want to serve it to the whole family and there are children present, replace it with instant barley.

STORAGE

The COCOA OVERNIGHT OATS PORRIDGE can be prepared the night before for the next day, in fact, it will be even better. Once ready, it keeps in the fridge in a closed container for up to 2 days.

    To achieve the perfect consistency for oats, it’s all about the oats-to-liquid ratio. Generally, a 1:2 ratio works well. If the oats are too thick, add a bit more liquid; conversely, if they are too watery, slightly reduce the amount of milk/water next time.

  • How can I balance sweetness when adding fruit and toppings to Rolled Oats?
