An easy recipe with no baking required: the coconut and yogurt balls are light, because they are made only with Greek yogurt and shredded coconut, without added sugars (honey or sweetener are optional) and will please everyone.

Ingredients

  • 1/2 cup Greek yogurt
  • 1/2 cup shredded coconut
  • 1 tbsp honey (optional)
  • shredded coconut
  • chocolate

Steps

  • In a bowl, place the yogurt, add the shredded coconut and the honey (optional) if you want a sweeter taste, then mix with a spatula to combine. You should get a moist but workable mixture.

  • With a spoon or damp hands, take small portions of the mixture and form balls the size of a walnut. Place on a cutting board or a baking sheet lined with parchment paper and refrigerate to solidify for 1 hour.

  • Meanwhile, melt the dark chocolate coarsely chopped using a bain-marie and stir with a spoon until completely melted. Dip the coconut balls completely, one at a time, using a fork. Drain the excess chocolate well, then place them spaced out on a sheet of parchment paper to solidify.

    Refrigerate until serving time

NOTES

YOGURT For this preparation, I recommend using Greek Yogurt because it is less liquid and creamier than the classic type. I chose 0% Greek Yogurt, but whole, 5%, or Coconut flavored yogurt are also fine to enhance the taste of the truffles.

HONEY Optional in this recipe, only if you want a sweeter taste. Alternatively, Agave syrup or Sweetener.

COATING You can alternatively choose to cover the Yogurt and Coconut balls with melted chocolate (dark, milk, or white) or with Shredded Coconut.

DECORATION It is not necessary, but if you want to make your Coconut and Chocolate Truffles even more beautiful, you can sprinkle additional shredded coconut on top before the chocolate has completely solidified.

STORAGE

The Yogurt Coconut and Chocolate Truffles – Coconut Bite can be prepared the day before. Once ready, they last in the refrigerator, closed in an airtight container for up to 1 day.
