When we talk about FAKE sushi it is because it doesn’t actually have anything to do with real sushi except for the idea or rather the presentation of this dish.
Lately, you can find a thousand versions of this recipe on the web: with sandwich bread wrapping the filling or with zucchini, and the same goes for the stuffing. The one we will prepare today is my favorite, which is the most successful in our house: the fake smoked salmon sushi.
The Fake smoked salmon sushi is nothing more than a roll created with smoked salmon, fresh spreadable cheese, and vegetables that, after being assembled, is cut into thick slices and served as if they were sushi bites.
A quick and tasty way to present an appetizer or a quick lunch, also suitable as finger food at a dinner party or buffet.
A dish to prepare at the last minute that is very versatile and can be personalized with your preferred ingredients: smoked salmon can be replaced with mortadella and chopped pistachios, or with cooked ham and tuna sauce, depending on what you have available at home.

Ingredients
- 10 slices smoked salmon
- 3.5 oz cream cheese
- 3 Roma tomatoes
- 3.5 oz spinach, cooked, boiled
- to taste salt
- 1 tbsp extra virgin olive oil

- Plastic wrap
Steps
To prepare the Fake smoked salmon sushi, first boil the frozen spinach in water, then drain them, squeeze them well, season with a pinch of salt and a tablespoon of oil and let them cool.
Lay the salmon slices on a sheet of parchment paper, spread a layer of fresh spreadable cheese, leaving the edges of the slice clean. Make a second thin layer with the seasoned spinach.
In the middle of the salmon slices, place the tomatoes cut into strips well-aligned. Roll the smoked salmon slice, helping yourself with the parchment paper. Try to make a tight roll, but be careful not to let all the filling come out.
Close the rolls with parchment paper or kitchen wrap and place them in the fridge to rest for at least 30 minutes to firm up. When ready to serve, cut the salmon rolls into pieces of about 1 – 1.5 inches with a sharp knife. Arrange the Fake smoked salmon sushi on a serving plate, drizzle with a bit of extra virgin olive oil, and serve.

NOTES
SALMON: To get closer to the taste of real sushi, you could use thin slices of fresh salmon carpaccio as long as it is frozen fish.
SPINACH: You can use either fresh or frozen spinach, the important thing is to squeeze them well after cooking so they do not release water. If you don’t like them, you can skip them or replace them with lettuce.
TOMATOES: Besides adding flavor, the tomatoes also serve as a “base” on which to roll your fake smoked salmon sushi better. A valid alternative can be boiled green beans.
STORAGE
The Fake smoked salmon sushi can be stored in the fridge, closed in an airtight container, for up to 2 days. It is not suitable for freezing.
