QUICK RECIPE BREADSTICKS with Phyllo Dough
I love breadsticks so much that when my husband wants to make me happy, he doesn’t bring me a bunch of flowers or chocolates (if such husbands still exist, I doubt it…) but a bag of breadsticks!
Every now and then I dedicate myself to making breadsticks at home, but it takes time and the desire to knead, which we don’t always have.
Recently, I found a recipe for Herb Breadsticks with Phyllo Dough, and it was a breakthrough: easy to make, no kneading or long rising times needed, and they are delicious and super crispy.
All you need to prepare them is to buy ready-made Phyllo Dough and the herbs you prefer from the supermarket fridge section: sage, rosemary, parsley, thyme, marjoram, they all work fine.
In a few minutes, with just 2 ingredients, you’ll have fragrant, aromatic, and tasty breadsticks to serve as a bread substitute or enjoy as a snack.
They are super light thanks to the phyllo dough, which contains no oil, butter, or yeast, and the mix of herbs gives them the right flavor.

Ingredients
- 10 sheets phyllo dough
- herbs (choose from sage, thyme, marjoram, oregano, parsley)
- extra-virgin olive oil (to brush phyllo dough)
- to taste salt

Steps
First, wash the herbs you have chosen and dry them with a paper towel. Remove only the smallest leaves or the tips of the sprigs and keep them. Unroll the phyllo dough and work with one sheet at a time, taking care to cover the sheets you are not using with a clean cloth to prevent them from drying out
Divide each sheet into 4 rectangles (approximately 5×9.5 inches). Brush the first rectangle with oil, then sprinkle it with the herbs and season with salt. Fold it in half and gently press with your hands to make it adhere. Brush again with oil, then roll it up along the long side of the rectangle to form a cylinder. Flatten it slightly and place it on a baking tray lined with parchment paper. Proceed in the same way until all ingredients are used up.
Bake at 355°F in a preheated static oven for about 15 minutes until the breadsticks are golden. Let them cool before removing them from the tray. Here they are, ready in just a few minutes: HERB BREADSTICKS with PHYLLO DOUGH!
NOTES
PHYLLO DOUGH: You buy it in the supermarket fridge section, usually found next to puff pastry. This recipe does not include substitute doughs, as using puff pastry or brisée would not yield the same result.
HERBS: Choose the one you prefer, which can be sage, rosemary, marjoram, thyme, parsley, or even a mix of them.
EXTRA VIRGIN OLIVE OIL: I used oil to brush the phyllo dough sheets, but you can substitute it with melted butter.
STORAGE
Homemade Herb Breadsticks with Phyllo Dough keep crunchy for a maximum of 2 days, best stored in an airtight container.
