LAYERED SWEET WITH RUSKS featuring Greek yogurt

I don’t know if it only happens to me, but I often buy rusks with the idea of having a healthy and light breakfast, and they regularly remain at the back of the pantry, because let’s face it, they’re not exactly a treat eaten on their own.

Recently, while browsing the web, I came across a video recipe that literally drove me crazy, made precisely with rusks, and today I want to share it with you.

A delicious and original recipe that’s very simple to prepare, ideal for a healthy yet indulgent breakfast, as a snack, and even as a dessert ready in 5 MINUTES!

It’s very easy to prepare; you just need to alternate layers of rusks with a cream made of Greek yogurt, unsweetened cocoa, and honey, decorate with hazelnut spread or chocolate protein cream, a bit of hazelnut crumbs, and you’re done.

Surprise your family with a healthy and tasty wake-up call that’s not even particularly high in calories.

It’s also super versatile: you can decide to “soak” the rusks in coffee instead of milk and replace plain Greek yogurt with coffee-flavored yogurt or other flavors you like.

Try this layered dessert with rusks, renamed by my family as RUSKAMISU, and you’ll see it will be a hit.

Ingredients

  • 3 rusks
  • 5.3 oz 0% fat Greek yogurt
  • 1 tbsp honey
  • 1 tbsp unsweetened cocoa powder
  • as needed milk (to soak the rusks)
  • 0.7 oz hazelnut protein spread
  • as needed hazelnut crumbs

Steps

  • In a bowl, add the honey and unsweetened cocoa to the Greek yogurt and mix to create a smooth, lump-free cream.

  • Take a rusk and dip it in milk (or a plant-based beverage), then place it on a plate.

  • Spread the yogurt cream on the first rusk, cover with another rusk (also softened in milk), and repeat the process to create three layers. Before serving your Rusk Tiramisu, spread a layer of chocolate protein cream (or hazelnut cream) and garnish with hazelnut crumbs.

NOTES

RUSKS It doesn’t matter what kind of rusks you have in the pantry, classic, whole grain or malted ones will all work just fine.

MILK You need to dip the rusks in milk but do not soak them; just soften them slightly. Instead of cow’s milk, you can freely use a plant-based drink like soy or almond milk, preferably unsweetened.

YOGURT Greek yogurt is the most suitable for this recipe because it is thicker and creamier, and less liquidy. I used plain yogurt with 5% fat, but flavored ones are also fine.

DECORATION The decoration is not mandatory if you don’t want it. Alternatives to the chocolate protein cream can include hazelnut spread or pistachio cream.

VARIATIONS For an adult version, soak the rusks in coffee and alternate them with layers of coffee yogurt or, if you’re truly indulgent, mascarpone cream to create a real RUSKAMISU!

STORAGE

The layered dessert with rusks is best eaten freshly prepared as the rusks can become too soft if left for too long. It keeps in the refrigerator for up to 1 day.
