Today I present this recipe for a Breakfast of Oats, Milk, and Greek Yogurt, a kind of Porridge that prepares in no time, full of energy and flavor, the LEMON OVERNIGHT OATS PORRIDGE.
A nice cup of this Anglo-Saxon dessert and we will be ready to face the challenges of the day, whether in the office, at school, at home for housework, or, for those who can afford it, to be tourists in villages and cities.
For those who don’t know, Overnight Porridge is a variant of the classic Anglo-Saxon recipe that does not require cooking, perfect for those who have little time or don’t feel like cooking. It is prepared in advance, usually the night before, left in the refrigerator overnight, and upon waking up it is ready to be enjoyed with your favorite topping.
An easy recipe: oats are mixed together with milk or water, Greek yogurt, flavored as desired with vanilla and sweetened with honey. Once the mixture is combined, there is no need to cook it, it will simply go in the fridge to rest for at least 4 hours, better if all night.
Once ready, you will only have to choose whether to layer it or not with yogurt of your favorite taste, spreadable creams, and garnish it with your preferred Topping because there are endless possibilities all delicious.
In today’s recipe I created a first layer with the Porridge, a second made from 0% Greek yogurt flavored with lemon juice and zest, and I simply finished by adding a little more lemon zest because often the simplest things are the best.
You will see how this no-cook Porridge cup will satisfy you, without weighing you down too much, for a long time and you will arrive at lunchtime without that annoying sense of hunger.

Ingredients

  • 1/2 cup rolled oats
  • 100 ml water (or plant-based milk or cow's milk)
  • 1 tsp honey (or maple syrup)
  • 4.2 oz 0% fat Greek yogurt
  • 2.5 oz 0% fat Greek yogurt (or lemon yogurt)
  • 1 tbsp lemon juice
  • 1 tsp powdered sugar

Steps

  • In a bowl, mix together oats, honey, yogurt, and almond milk (or cow’s milk or another plant-based drink) until combined. Transfer the mixture into a single-serving cup and refrigerate for at least 4 hours, preferably overnight.  

  • After resting and before consuming, finish the preparation. Grate the zest of one lemon and squeeze its juice. In a bowl, combine yogurt, powdered sugar, 1 tablespoon of lemon juice, and a bit of zest until smooth. Pour everything over the oats layer and level with the back of a spoon.

  • You can enjoy your no-cook Porridge just like that, adding a bit more lemon zest as a decoration, but if you want to make it super delicious, melt 30 g of white chocolate in the microwave along with 5 ml of coconut oil and distribute it evenly over the yogurt and lemon layer. Refrigerate to harden for a few minutes. Decorate with grated lemon zest to taste.

NOTES

WATER To have an even creamier porridge, you can replace the water with an equal amount of cow’s milk or plant-based drink (soy, almond, oats, rice).

HONEY You can substitute honey with maple syrup or sweetener, for a light version.

LEMON: If you don’t particularly like its taste, you can replace it with any other citrus fruit like: orange, grapefruit, mandarin.

VANILLA It’s incredible how a pinch of this essence can improve the taste of your Porridge, but if you don’t like this spice, you can omit it.

OVERNIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably all night. This allows the flavors to meld and the oats to soften to the perfect consistency.

STORAGE

The LEMON OVERNIGHT OATS can be prepared the night before for the day after, and it will taste even better. Once ready, it can be stored in the fridge in a closed container for up to 2 days.
