Ingredients
- 9 oz mascarpone
- 3/4 cup vanilla powdered sugar
- 1 cup heavy whipping cream
- 1 espresso cup coffee (or 10 g instant coffee)
Tools
- Bowl
- Electric whisk
PROCEDURE
Please note, for perfect execution, all ingredients must be refrigerator cold.
First, prepare a concentrated espresso shot and let it cool completely (cooling is very important, otherwise, it would deflate the preparation). Alternatively, dissolve 10 g of instant coffee in an espresso cup of boiling water, mix well, and let it cool completely. To speed up this process, you can place the cup (of espresso or dissolved instant coffee) in the fridge.
Meanwhile, put the mascarpone in a bowl and quickly work it with a fork to soften it, then add the fresh liquid cream and start whipping, with the electric whisks, adding the powdered sugar gradually. As soon as you see that it begins to have a denser consistency and while continuing to whip, add the coffee slowly. It should become dense and fluffy. It will take 5-7 minutes in total, be careful not to over-whip it as it could curdle (the fat separates from the liquid, buttermilk) compromising the result.
Your Mascarpone Cream with COFFEE is ready: you can serve it portioned in cups as it is, make it more delicious with a sprinkle of grated dark chocolate and a dollop of whipped cream, or use it to fill cakes, rolls, prepare tiramisu, accompany Pandoro or prepare any dessert your imagination suggests, it will still be a success.
